If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Line a 20x20cm tin with baking paper
1. Place melts into thermomix and grind to a fine powder for 6 seconds at speed 9. Remove and set aside (no need to wash bowl).
2. Add all ingredients except chocolate and salt into the thermomix bowl, cook for 8minutes at 100C on speed 3 without the measuring cup.
3. Scrape the fudge from the sides of the bowl and replace lid.
4. Cook for 25minutes on varoma (don't use measuring cup) on speed 3.
5. Add powdered chocolate and mix for 10seconds, speed 4.
6. Scrape down bowl and repeat step 5.
7. Pour fudge quickly into lined tin, sprinkle with salt flakes (gently press onto surface) and refrigerate a minimum of 4 hours or until set.
8. Using a sharp knife cut into 36 squares.
9. Will keep approximately 2 weeks in a sealed container in the fridge.

Yes certainly, any kind of salt flakes will do. You could just use ground salt but it is extra nice with the flakes as they hold shape and you get a pop of salt

Add 300g of milk to your bowl
Add 300g of milk to your bowl after scraping all you can/want to get out and mix 5 sec /speed 8.
Then heat at 80° / speed 4 and enjoy a salted caramel hot milk. Or perhaps add some raw cocao and make it salted caramel hot chocolate.......be shame to waste l tht yummy goodness

I just made this in my TM5
I just made this in my TM5 and it tastes delicious! Beautifully smooth and creamy with a great caramel taste. I have always made fudge by hand and it's a bit of a workout!! I wont be doing that anymore! You do have to work quite quickly to scrape the fudge out of the bowl and it is a bit difficult to get the last of it out but, hey, I just scraped the rest out when it was cool enough and ate it!! YUM!!!
