Ingredients

16 piece(s)

  • 250 grams plain flour
  • 1 tsp baking powder
  • 150 grams brown sugar, firmly packed
  • 1/2 teaspoon ground cinamon
  • 1/4 teaspoon nutmeg,ginger,cardamom
  • 1/2 teaspoon cloves ground
  • 150 grams cold unsalted butter, cubed
  • rice flour to dust

Recipe's preparation

    biscuit dough
  1. preheat oven to 170 deg

    Process flour, baking powder, sgar, spices 1/4 teaspoon salt and butter in TM, 20 secs speed 6  til mixture forms fine breadcrumbs. 

    Add 50 gm ice water and process 20 secs speed 5 til mixture comes together.

    Turn ont a work surface and form a ball, cover and refrigerate for 30 mins to firm.

    Roll out into  golf ball  size balls and press into rounds or press spoonfuls into moulds.

    Leave cut biscuits overnight if possible as this will set the mould and keep the detail if doing moulds.

    Cook 170 deg 30 mins til firm and crisp.

moulds can be bought from specialty shops.

grind your own spices... so much tastier and add extra to your taste, add drop of almond essence or rum too!
