Steamed Kiwi Puddings with Kiwi Glaze

  • 2 Eggs, separated
  • 4 Kiwi Fruit
  • 130 g Self Raising Flour
  • 80 g Milk
  • 1 pinch salt
  • 5 g vanilla extract
  • 80 g Butter, softened
  • 60 g raw sugar
  • 2 Extra Kiwi Fruit, thinly sliced

Kiwi Glaze

  • 50 g raw sugar
  • 10 g water
  • 40 g Kiwi Fruit (reserved from puddings)

Recipe's preparation

    Puddings
  1. Place egg whites and butterfly in a clean and dry bowl and whip for 2 minutes / speed 4

    Set aside

    Clean and dry bowl then mill sugar 10 seconds / speed 9, scrape bowl and add kiwi fruit and chop 10 seconds / speed 6. Set aside 40g of chopped kiwi for the glaze.

    Add milk, butter, salt, yolks and vanilla to the jug then mix 10 seconds / speed 4. Scrape sides and add flour then mix to combine for 10 seconds / speed 4.

    Add whites and gently combine 5 seconds / Counter-clockwise operation / speed 4

    Place a slice of kiwi fruit in the bottom of 12 silicone cupcake moulds then pour pudding mix into moulds and place in varoma trays. Pour 500g water into clean jug and steam 20 minutes / varoma / speed 2

  3. Place all ingredients in jug and reduce for 4 minutes / 90 degrees / speed 2

    Tip puddings out of the moulds so slices of kiwi are on top then drizzle glaze over the top and serve.

    Had Kiwis to use so tried this recipe. Made 6 Friand sized puddings, cooked an extra 5 mins. Perfectly cooked and delicious recipe with Vanilla Icecream. Kids loved them too.

    Made these for dessert tonight, omitted the kiwi slices on bottom & added strawberries as well . Made 6 ramekins & increased the cooking  time .... YUM!
