  • 250g Boiling water
  • 175g Dried pitted dates
  • 1tsp bicarb soda
  • 100g unsalted butter
  • 165g dark brown suger
  • 2 eggs lightly beaten
  • 225g Self rising flour
  • 1tsp ginger

caramel icing

  • 30g unsalted butter
  • 55g Dark Brown Sugar
  • 30g cream

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    cakes
  1.  pre heat oven to 180

    place dates in jug and weigh in 250g boiling water from kettle.

    cook for 3mins/100/speed 2

    stir through bicarb with spatula it will froth up remove jug and leave to cool 5mins

     

    add butter and sugar and stir for 3mins/speed 2

     

    add eggs 

     

    sift flour and ginger add to jug and mix 1 second /rev /speed 5

    till just combined i then used spatula to combine further you dont want to over combine 

    divide mixture between 18 cupcakes and cook for approx 15mins 

  2. caramel icing
  3. cook for 3mins/ 120/speed 2

    reduce heat tp 100 and cook further 2mins

    then add icing sugar and beat speed 4  until smooth 

    you make have to scrape down once or twice its runny  put into bowl to as it will thicken as it cools

Tip

the origanal recipe was from junior masterchef i halved icing as i think cake sweet enough,

you could add a little salt to caramel topping

make sure you cool cakes well before icing i also added a walnut to topping

    I made these for a work morning tea this week. They turned out great. I thought they might be too sweet but they were perfect. Someone suggested making a batch, freezing them all and then eating one every day with some icecream! Great idea to take to a party to share with lots of people.
