Sticky Pear Ginger Cake

  • 140 g golden syrup
  • 100 g Dark Brown Sugar
  • 125 g cold butter, diced
  • 250 g Self Raising Flour
  • 1 tsp bicarb soda
  • 1 tbsp ground ginger
  • 310 g Milk
  • 1 large egg
  • 2 pears (peeled, cored and diced), You can used tinned pears also

Recipe's preparation

  1. Cook butter, golden syrup and sugar on 90c, 5 minutues, speed 2


    Add dry ingredients, milk & egg, mix speed 4, for 4-5 seconds (until dry flour is just combined, don't be tempted to over mix as this will keep it light and fluffy)


    Add pear pieces, mix reverse speed 2, 3 seconds
    Line a square cake tin with baking paper, add mixture and bake 180c for 60 mins or until cooked (test with a wooden skewer, it is ready when it comes out clean)


    Cool in tin for 10 minutes, then cool on a wire rack until cold

Tip

 

This tastes amazing warm or at room temperature, and tastes great with a dollop of sour cream or natural yoghurt (made in the Thermomix of course!) Always tastes better the next day!!

For a richer flavour, use 70g golden syrup and 70g of treacle.

    Thankyou for sharing this delicious, easy recipe. The cake is so easy to make, light and moist and so tasty. I added sone mixed spice along with the ginger, so tasty.
    Hubby just loves pears and this cake has been devoured for dessert over the last few nights.

    I've made 4 times now. I've made as written, I've made a version of pear and vanilla (just no ginger and added vanilla), I've also made a version with tinned diced pineapple and vanilla (just no ginger and added vanilla). Every version has baked beautifully.

    I'm about to make this for the 5th time, it's my goto cake recipe.

    Our whole family loves this cake. I double the recipe in my TM5 and bake it in a 10" X 15" tin for a slightly thicker cake. I also add a tablespoon of pumpkin pie spice and top with cinnamon sugar before baking to add about more flavour.

    I have made this cake 3 times now and it is almost 'inhaled' every time. I have made it with both fresh and tinned pears and it works fine with either. I do add 1 extra teaspoon of ground ginger as we love the taste of ginger but that is the only change I have made. Absolutely delicious recipe - thanks for sharing.i

    Very nice cake. The batter is really runny (so i was a bit dubious... but it turned out well) and instead of using 310ml of milk i used 260ml of milk and an extra egg. I could have used a bit more ginger as the flavour is subtle. Thanks.

    Simply amazing. I found this after searching for a recipe I could use a couple of pears in as I had some at the bottom of the fridge. Love ginger so added an extra teaspoon. The cake is probably one of the best I've made - tasted wonderful and so, so easy to whip up. Will be a favourite in future

    Yummo !! I sliced 1 big pear and laid the slices down ontop of some brown sugar them poured the batter ontop. 60mins on 160deg. Foil ontop half way through cooking time ☺

    This cake is amazing! I added a tsp of cinnamon and a tap of vanilla paste and used 30ml of cream as a part of the milk because I had a bit left in the fridge. So delicious. It's just come out of the oven and is already a quarter gone!

    I made this before I headed out to playgroup with the kids this morning.  It took next to no time to mix and get into the oven, and it uses pantry staples that I have, so I didn't even need to shop for or substitute ingredients.

    I used a whole tin of sliced pears instead of fresh and it was delicious.  Nice and light and well spiced.  I didn't feel it was too sweet either, so it was perfect with a cuppa!  

    Everyone loved it.  I will be making this again.

    I like the idea of using apple and cinnamon for variety.  Great recipe, thank you.

    I was so looking forward to this cake. It browned beautifully and I thought it was cooked after 55 minutes. I've just cut it and its underdone. Next time I will cover after 45 minutes and cook an extra 10 minutes.
