Strawberry and pistachio slice

Ingredients

20 slice(s)

Topping

  • 70 grams plain flour
  • 70 grams raw sugar
  • 30 grams rolled oats
  • 30 grams pistachio nuts
  • 1/2 teaspoon ground cinnamon
  • 125 grams unsalted butter, chopped

Base

  • 125 grams unsalted butter, chopped
  • 100 grams raw sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 140 grams plain flour
  • 70 grams rolled oats
  • 250 grams strawberries, washed and hulled

Recipe's preparation

  1. Preheat oven to 180. Line a 18x 28cm slice tin with baking paper.

    Place all topping ingredients into bowl and mix 6sec/reverse/sp5. Set aside.

    To make the base: Melt butter 1 min/50deg/sp3. (doesn’t need to be liquid but soft enough to combine with dry ingredients)

    Add in sugar, egg and vanilla and mix 6sec/sp5. Scrape down sides.

    Add flour and oats and mix 6sec/reverse/sp 5.

    Scrape mixture into the prepared tin and smooth across evenly.

    Chop strawberries 2sec/sp4 and spread over base mixture.

    Sprinkle the reserved topping mixture on top of the strawberries and bake for 25-30 mins.

    Cool on a wire rack before cutting.

Tip

Other berries would work well too.

No need to wash bowl between stages, just scrape well with spatula.

To spread base mixture over the tin, try using a layer of baking paper on top to smooth it over – makes it smooth and keeps your hands clean.

    Pistachios and strawberries are my two favourite foods so I know I'm going to love this. It's currently in the oven cooking and it smells amazing.

    I could easily double this recipe for the way my family eat sweet treats.

    This recipe is AH-mazing!!! I actually felt bad about all the praise I received for this when all I did was follow some instructions! 

    I had to cook my slice for a little bit longer, but only because I can't seem to cook anything through, without burning the top if I use my oven at 180, so I cooked at 165 for about 50 minutes.
