Sugar Cookie dough
- 125 grams Butter
- 200 grams sugar, (raw, caster or white)
- 300 grams plain flour
- 1 egg
- half vanilla bean, or a dash of vanilla essence
- 1 pinch salt
- 1/4 teaspoon baking powder
Decorations
- sugar, (raw caster or white)
- coloured cachous
Recipe's preparation
*If usuing raw sugar, blitz for 5 secs on sp 9 first
Add butter and sugar to TM bowl, cream 20 secs sp 4.
Scrape vanilla seeds from vanilla pod into the bowl (if using)
and add rest of ingredients, bring together sp 6 10 seconds, scrape down sides and mix sp 6 another 10 seconds.
Turn to closed lid and mix on wheat setting for 20 seconds - mixture should resemble crumbs but won't be brought together entirely.
Tip out onto Thermomat (or a floured board) and gently bring together into a ball. Put into a zip lock bag or wrap in cling wrap and rest in the fridge for minimum of 1 hour.
Take dough from fridge and roll out onto a floured board with a rolling pin to apprimtely 5 ml thickness. Cut shapes and place onto a cookie tray lined with baking paper ready to bake. Cookies can be decorated with a scattering of sugar or coloured cachou balls or left plain.
I use a small star cutter and get approximatey 80 cookies out of a batch. Bake for 5 to 7 minutes, 180 degrees fan bake and cool on wire rack.
Note: If you you use a larger cookie cutter, your cooking time may vary and need to be adjusted accordingly. The star cutter I use is 5cms wide.
As Christmas and holidays approach us, this is a great recipe for kids, as it rolls out well and is great for cookie cutters. The dough is very forgiving and is easily able to be brought together again numerous times after it has been used to cut out the first lot of shapes

Tip
If you like a crunchier biscuit, cook until the sides are just starting to turn golden.
Dough can be made the day before and kept in the fridge. It also freezes well.

Made these cookies today. The dough is great to work with and it made about 25 of these hearts per batch. I made two separate batches one was in the fridge for an hour and the other was in the fridge for an hour and a half. It’s true, the cooler the dough the better it is to work with. Tomorrow will be the taste test!

This is a great cookie cutter dough, which turns into delicious cookies! (Although, it is delicious as a dough also, if you know what I mean! ) I made 4 batches with sugar reduced to 150gr, popped to freezer & used a week later, after placing in the fridge for 6 h. I needed a recipe for short cookies for my christmas bells & this one turned out perfect! Thanks!

Thanks for this brilliant recipe. I only used 150g of sugar, (sweet enough for me), and it worked well.
I did a batch of them with 20g of cocoa added. They taste delicious but the dough breaks more, so they are a little more tricky to cut (I used a large cutter in a shape of a train).
I baked them and they are about to go to the freezer ready for a birthday party in a few days. I was recommended it works well.

i turned these in lemon and poppyseed cookies, by added lemon zest @ step 1 and blitzing with the sugar and adding 1 tablespoon of poppy seeds with all the other ingredients !
Dough was easy to make. I
Dough was easy to make. I stuck it in the freezer for about 30 mins and then it was well-enough chilled to roll out.
I found rolling the dough a bit tricky (but then again I always do, whenever I have to roll out dough for any recipe).
Missed the step about refrigerating the cut-shapes before baking and that was a big mistake. The biscuits spread at lot and completely lost their shape, so I completely wasted my time cutting them out. Sigh.
They tasted fine, but I don't think I'll make this one again... was just a bit too much effort for my liking (not making the dough, just all the rolling and cutting out shapes).

Substituted 20g Cocoa to this recipe to make skeleton biscuits for Halloween. I didn't refridgerate the dough so was a little trickier to handle but still turned out great!

Thanks for a great recipe. I used spelt flour, 150g rapadura sugar and a squeeze of organic vanilla bean paste to make it healthier. Easy to work with and kids loved it!

I made this recipe today with my almost 3 year old. We added green food colouring and using my "Undead Fred" Cookie cutters made Zombies They were a huge hit, my husband loved them...
I find the dough was very difficult to roll out, I also used 1/2 self raising flour, as I only had enough plan flour for 1/2. They were delicious.

Ours always last for about a week in an airtight container! I'm in Queensland and in Summer I find the mixture is just too sticky to roll out with some chilling time - might be different elsewhere!

Didn't chill before baking
Didn't chill before baking but they were still great. Rolled out fondant and used the same cutter (made ghosts for Halloween). Stuck it down with brushed water. They lasted over a week in an air tight container (only bc I made so many). Really yummy

Great recipe. I was slightly ambitious and made the first tray having not chilled the dough for long enough - they still baked perfectly, but the dough is SO much easier to work with and to get a uniform shape with the cutters when it is nice and cold.
These will be going off to work tomorrow with my husband to share with his team.
