Ingredients

30 piece(s)

Cookie Dough

  • 125 grams Butter
  • 90 grams brown sugar
  • 90 grams raw sugar
  • 1 teaspoon vanilla essence
  • 1 egg
  • 120 grams oats
  • 130 grams plain flour
  • 1/2 teaspoon bicarb soda
  • 1/2 teaspoon baking powder
  • Pinch salt
  • 170 grams choc chips

Recipe's preparation

  1. 1. Pre-heat the oven to 180 degrees or 160 degrees (fan forced) and line up to 4 trays with a non-stick mat or baking paper (or rotate 2 trays).


    2. Place oats in the Bowl and blend on speed 5 for 10 seconds. Set aside.


    3. Place butter and both sugars into the bowl and combine on speed 4 for 30 seconds or until butter and sugar are whipped and light.


    4. Add egg and vanilla essence and combine on speed 4 for 10 seconds.


    5. Add blended oats, flour, bicarb, baking soda and salt and combine on speed 2 for 20 seconds. You will usually need to scrape down the sides of the bowl and try and another few times on speed 2-3 for 10-15 second bursts until dough is well combined.


    6. Add choc chips and mix on speed 2 for 20 seconds Counter-clockwise operation. You may need to assist the dough by placing the spatula in the lid and pushing the dough back down (another taste test is now usually required).


    7. Once dough is combined, hand roll small clumps of dough and then flatten slightly before placing on a prepaired tray. You can also choose to empty all the dough onto a non-stick mat, roll into a long sausage and cut, although this can sometimes get quite sticky.


    8. Once a tray is full, bake in oven for 8 minutes for chewy biscuits (the way I like them), or 10 -12 minutes for crunchy biscuits.


    Note: As the cookies bake quicky, I usually just rotate two trays, as this will make up to 4 trays of biscuits if you make them small.


    This recipe is an adaption from the 'Neiman Marcus Cookie' recipe that flooded the internet some time ago.

Tip

You can add M&M's instead of the choc chips, or add nuts, or other falvoured essences to change it up a bit.


It really is a yummy cookie, but they will go FAST!!

    Great recipe! I actually reduced the amount of sugar and added in some pepitas. The choc chips I used were dark Belgian chocolate and I used the amount specified in the recipe. I am wondering what these cookies would be like with coconut added in so might try that next time.


    I am adding this recipe to my cookie collection.
