Absolutely divine. I made this for a family barbecue - everyone was delighted. Moist, sweet, simply yummy. I made the buttercream icing but only used 2 tbsp of pure maple syrup - just enough sweetness to complement the cake. I will definitely be making this again
This recipe turned out
This recipe turned out PERFECT! Light, moist & delicious. Didn't bother with the buttercream icing, as it really doesn't need it. It's lovely & sweet enough as is.
My variation was that I added a handful each of chopped dates & unsalted cashews in the final step in place of the currants..... Mmmm yum.
I also used 100g of milk and that amount was spot on for me. Will certainly make again, thank you!
This cake is great - lovely
This cake is great - lovely and moist. I can't comment on the icing as it has never lasted long enough for me to ice it. I generally use about 60-65g of milk.

This cake is fantastic! I made a gluten free version using gf self raising flour and 1/8 tsp of xanthan gum. I also used chocolate chips instead of nuts and currants. My kids and friends loved it - perfect for our carols by candlelight picnic. Will definitely be making this again!!
