Tash's Banana Cake with Maple Buttercream

Ingredients

  • Cake ingredients:
  • 80 g Butter
  • 130 g caster sugar
  • 2 eggs
  • 3 mashed banana's (the riper the better)
  • splash of vanilla
  • 180 gself raising flour
  • 1/2 tspbi-carb soda
  • 50-100 g Milk
  • sprinkle of mixed spice
  • handful of currants (optional)
  • handful of chopped walnuts (optional)
  • Buttercream Ingredients:
  • 125 g Butter
  • 110 g icing sugar, mixture
  • 4-5 Tbs pure maple syrup

Recipe's preparation

  1. Pre-heat oven to 180ºC and line a loaf tin or a 20cm round tin.

    Cake method:

    Cream butter and sugar on speed 8 for 20 seconds.

    Add eggs and mix on speed 4 for 10 seconds.

    Add mashed bananas and vanilla and mix on speed 4 for 5 seconds.

    Add flour, bi-carb soda, milk and mixed spice and mix on speed 4 for 10 seconds (if too thick add more milk).

    Add currants and nuts and on Counter-clockwise operation speed 4 for 5 seconds.

    Bake for 40-60 minutes or until browned, the top springs back when pushed, sides have shrunken back from the tin a little and a skewer tests clean.

    When cake is cool ice with maple buttercream.

    Buttercream method:

    Cream butter on speed 4 for 2 minutes or until it becomes pale yellow in colour.

    Add icing sugar and maple syrup and mix on speed 4 for 30 seconds.

    AMAZING!!!!   So moist and the buttercream is incredible. I only put 3 Tbsps in but that was sweet enough.  Thanks for the share, really lovely.

    Love this recipe, I actually used this recipe for muffins instead of a cake and they were delicious. I added pecans instead of walnuts as I had a few to use. yum and great to freeze now.

    Moist, buttery, banana cake! Banana is the hero. Great way to use 3 ripe bananas. Only made the cake & terrific on its own. Look forward to making the maple buttercream next time.

    Absolutely divine. I made this for a family barbecue - everyone was delighted. Moist, sweet, simply yummy. I made the buttercream icing but only used 2 tbsp of pure maple syrup - just enough sweetness to complement the cake. I will definitely be making this again

    This recipe turned out PERFECT! Light, moist & delicious. Didn't bother with the buttercream icing, as it really doesn't need it. It's lovely & sweet enough as is.
    My variation was that I added a handful each of chopped dates & unsalted cashews in the final step in place of the currants..... Mmmm yum.
    I also used 100g of milk and that amount was spot on for me. Will certainly make again, thank you! tmrc_emoticons.)

    This cake is great - lovely and moist.  I can't comment on the icing as it has never lasted long enough for me to ice it.  I generally use about 60-65g of milk. tmrc_emoticons.)

    This cake is fantastic! I made a gluten free version using gf self raising flour and 1/8 tsp of xanthan gum. I also used chocolate chips instead of nuts and currants.  My kids and friends loved it - perfect for our carols by candlelight picnic. Will definitely be making this again!!
