  • 2 large bananas
  • 2 tablespoons honey
  • 2 tablespoons Rice malt syrup/ maple syrup
  • 200 grams plain flour
  • 100 grams decicated coconut
  • 1.5 teaspoons baking powder
  • 1 teaspoon bicarbonate soda

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Preparation
  1. Pre heat oven to 190 degrees and line muffin tray with cases

    Add margarine to bowl and melt 2 min 60 degrees speed 1

    Add eggs, bananas and vanilla essense and combine 10 seconds speed 3

    Add rice malt syrup OR maple syrup, honey, coconut, flour, baking powder and bicarbonate soda and combine 10 seconds speed 4, scrap sides down if necessary.

    Divide into the 12 muffin cases and bake on 190 degrees 20 min or until golden brown and a knife comes out clean

    I made these muffins yesterday and they were amazing. I used real butter only 100grams and I added 60 grams of butter milk as well due to other comments about the mixture needing to be a wee bit more moist. The result was delicious. I am making a second batch today to freeze.

    very yummy recipe!! although... it needs more liquid (possibly water). mixture was very dry and crumbly.
