ThermoWhat Cacao Quinoa Muffins

Ingredients

12 portion(s)

Cooked white quinoa; Coconut milk/cream; eggs; Vanilla extract; Coconut oil; Coconut sugar; Cacao powder; GF Baking powder; Sea salt

  • 140 g cooked quinoa., See instructions below
  • 70 g coconut milk/cream
  • 4 large eggs
  • 1 teaspoon vanilla essence
  • 40 g coconut oil
  • 140 g Coconut sugar, (rapadura is suitable as well)
  • 35 g raw cacao powder
  • 1 1/2 teaspoons Gluten Free Baking Powder
  • 1/2 teaspoon sea salt (fine grain)

Recipe's preparation

    Cooked Quinoa
  1. 1. Soak 140g of white quinoa for 10 15 mins

    2. Fill TM jug with 700g water

    3. Rinse quinoa and place in Simmering Basket

    4. Steam for 17minutes or until cooked - please note quinoa must be well cooked for this recipe

  2. ThermoWhat CACAO QUINOA MUFFINS
  3. 1. Preheat the oven to 350 degrees F.  Line a muffin tin with the 12 large-sized cupcake liners or Silicon moulds.

    2. Place all ingredients in TM bowl and blend for 10secs, speed 4; scrape sides of jug and blend for another 5secs or until all combined.

    3. Pour directly from TM jug and distribute evenly into liners/moulds. Ensure there are no air bubbles in muffins.

    4. Smooth surface of each muffin with a heated butter knife.

    5. Bake approximately 30 minutes or until done. Check via cake tester or toothpick.

    6. Allow to cool for 5 minutes in moulds/liners. Remove and allow to cool on rack.

    7. Dust with icing Sugar prior to serving or eat them as is.

    8. These muffins can be kept in an airtight container in the fridge for up to 1 week - good luck with that as I don't think they will last that long.  They freeze really well for up to a month.

Tip

These muffins are great for school lunches and can be cooked in small muffin cases as well.  They are a good source antioxidants and protein.
