Tulani's Yummy Caramel Slice

Ingredients

24 portion(s)

The Biscuit Base

  • 1 Cup of Self raising flour
  • 1 Cup of Soft Brown Sugar
  • 1 Cup of moist Coconut flakes, Or 1/2 cup of crushed almonds
  • 125 g Butter

Caramel Layer

  • 395 g Tin of condensed milk (or TM made)
  • 40 g golden syrup
  • 70 g Butter
  • 70 g Soft brown sugar

Chocolate Top Layer

  • 1 Block of dairy milk chocolate
  • 1/2 Block of white chocolate

Recipe's preparation

    The Biscuit Base Preparation
  1.  

    1. Preheat oven to 170º C.

    2. Grease an 18 x 28cm lamington pan.

    3. Place the 125g butter into TM bowl and melt for 2 minutes at 70º on Speed 3

    4. Add flour, sugar and coconut and mix for 40 seconds on Speed 5 with the

    aid of the spatula.

    5. Press into pan and bake for 10 mins.   

     

  2. Caramel Layer
  3.  

    Turn oven down to 150º         

    2.      Place Golden syrup, condensed milk, butter and brown sugar into a clean TM bowl and cook for 5 minutes at 70º on speed 3 and then cook

    a further 5 minutes at 50º on speed 3.

    3. Spread over base and bake a further 15 minutes, cool. 

     

  4. Chocolate Topping
  5.  

    1. Place chocolate into TM bowl and grate for 10 seconds at

    Speed 8.

    2. Scrape down sides of bowl.

    Melt for 3—5 minutes on 50ºC Speed 3-4 until completely melted.

    Pour over slice. Refrigerate til set.

    YUM YUM YUM AWESOME!!!! The first time I made this it was so delicious and naughty and rich that it disappeared way too quickly, so, I made it again to take to our Neighbourhood Pre-Christmas Drinks Party but this time I cut it into little 4cm squares so everyone could get a piece. I used the hot knife trick to cut it into long fingers then popped it back into the Fridge for another hour then cut them again into the smaller pieces and had hardly any cracking. I hope everyone got some cos all I got was the empty plate but I did get lots of mumbled praise of "MMMMMM" "YUM" and "OMG"s. I am going to make it again for New Year Celebrations. Thanks for sharing this one.

    Can you please confirm how many grams of chocolate is required as block sizes seem to be decraseing all the time i.e now they are 200 grams but not too sure if at time of publication they were 250 grams?

    Delicious! I made this yesterday. Was so quick and simple to make! I popped it into the fridge after the chocolate layer but not long enough for the chocolate to set completely - meant the chocolate didn't crack and I now have perfect pieces!

    Fantastic.  Thank you. Even though I stupidly forgot to add the butter to the caramel mix, it turned out fine, and, delicious.  I had reduced the sugar as per previous comment.  Another tweak was to use dark and milk choc combo, and it is perfect, right blend of rich sweet For our tastes.

    And, thanks for the anti cracking tips, I did put about 1tblsp olive oil and made sure it was very cold before cutting, mostly successful, very few cracks.

    This will become a stalwart.  love this forum.

    Very nice but almost too sweet for me and I am a big caramel slice fan. Think next time I might try reducing the sugar in the caramel layer.....

    The oil in the chocolate layer worked well for me and I had only a few cracks.

    First time I've ever made Caramel Slice and it was so easy (apart from me mis-reading the ingredients and stuffed up by using too much flour, fixed that by adding more melted butter). The caramel is amazing.  I had to stop myself at 3 pieces.

    This slice is simply delicious. I made this especially for my sister who claims to be have the low-down on good and bad caramel slices. And her verdict - brilliant! Loved the base particularly. The tip of a teaspoon of oil into the chocolate was a good one as it did help the chocolcate not crack.

    I usually stir a tbsp oil into the melted choc before I put it on top of slice this tends to stop the chic from cracking when you cut it up. Hope this helps  tmrc_emoticons.)

    WOW! That is a bummer... I find that if you leave it in the fridge in the baking tin you cooked it in til really chilled, then pop the whole peice out and try either using a hot knife warmed under hot water to score through the chocolate first then cut through the rest..OR turn upside down and slice through from the base downwards...You need a BIG heavy sharp knife to get better results.. and it is best to be refridgerated before serving or it gets too soft when it is warmed to room temperature.. hope this helps

    You could replace the coconut with crushed almonds or nuts, say 1/2 cup instead of a cup as the nuts would be denser, as long as the mixture isnt too dry... hope that helps Wildmum Let me know how you go ..
