Chocolate Cake
- 450 g self-raising flour
- 450 g sugar
- 1.5 tsp vanilla extract
- 60 g cocoa powder
- 2 tsp baking soda, (bi-carb soda)
- 200 g Butter, (softened, cubed)
- 250 g Milk, (or alternatively you can use 1 cup of unsweetened yoghurt)
- 3 --- large eggs
- 250 g boiling hot coffee, (I used 2 tsp instant coffee mixed with boiling water)

Recipe's preparation
- Preheat oven to 160°C fanbake.
- Grease a 30cm-diameter springform cake tin and line the base and sides with baking paper.
- Place all ingredients in the bowl (in order that ingredients are listed).
- Put on lid and mix for 30 seconds, speed 5.
- Open lid, scrape sides of the bowl down with a spatula and mix a further 5-10 seconds, speed 5 until the ingredients are combined and the butter is fully incorporated.
- Pour into prepared tin and smooth top.
- Bake in the oven for 1 hour or until a skewer inserted into the centre comes out clean.
- Cool the cake in the tin.
- If not using straight away, store in an air tight container in the fridge for up to a week or cake can also be frozen uniced.

Tip
I used a 23cm spring form tin. Luckily I lined it with baking paper above the height of the tin because the cake reached well over the top of the tin while baking.
You can not taste the coffee, it enhances the chocolate flavour and is recommended you leave it in. However, if you wish to leave it out, you can substitute for hot chocolate powder.

This was really good. Due to the amount of mixture I made one big cake and 8 cupcakes. I changed the coffee for dark drinking chocolate and it was divine. The entire family loved this. I made a chocolate buttercream to go on top.
This will be my go to for chocolate cake and cupcakes in the future.

So happy with how this turned out, and was a very impressive birthday cake.
Sliced in half, smeared icing in the middle and decorated with choc fudge icing.

This is Devine! Everyone loved it! I didn’t have a big enough tin, so did one in a spring form and one in a bunt tin ( which I sent to work with hubby and got a massive thumbs up from the work boys)
I did a chocolate cream cheese icing. Put it on top of tue bunt cake and for the sling form, cut it in half and put in inside the cake! Absolute winner, so quick and easy ( so is the chocolate cream cheese recipe I got off the community)
this will be my go to choc cake from now on!

What a great recipe! This is definitely going to be my go-to Chocolate cake to feed a crowd from now on. I did use espresso instead of the instant coffee, but as far as changes go that was it.
I made this in the 30cm springfrom tin as directed and when it was cool I halved the cake and used a cream cheese icing as the filling and made it a 'naked cake' when icing it. I held up beautifully was just so easy to work with. Definitely a keeper!

Made this again into 30 cupcakes. Reduced sugar to 180 and topped with chocolate ganache. It is delicious!! I ran out of milk so replaced with soy milk, still yum!!

I increased the yield by adding another 1/3 of everything to mixture. It did need some encouragement to combine. By stabbing the spatula in while stirring and a couple of scrape downs. But it made 1 regular round, 1 small round and a small loaf size. all nice adn high! LOVE IT!!!!!!!

One of the best tasting
One of the best tasting chocolate cakes I have ever made. Baked mine in a 20cm x 20cm tin, it was huge! and deliciously moist, covered it with Choc butter icing and froze half of it. Definitely think adding coffee makes it more chocolatey.X

So easy! Delicious moist cake. I made a small one in a 15cm round tin a larger one in a 25 cm tin - both rose high. Took the smaller one out after 35 minutes and the larger one still took about 50 minutes. I only reduced the sugar a but because it looked like a lot, it's still sweet. And I accidentally used cacao in stead of cocoa - yummy yummy yummy

Ah-mazing! I made this cake to send to work with my hubby for a colleague's birthday - the firefighters loved it with butter cream frosting. Today I used the recipe to make cupcakes, looks to make about 30ish large ones, they took 20 mins to bake.

What a fabulous recipe this is! So very easy and it is the highest rising cake I have ever made. Very moist with a lovely flavour, no trace of coffee. Definitely a favourite of mine and the people at my son's 12th birthday said that it was the best cake I had made. I will make it again PS I made it and froze it and it worked very well.

Really yummy cake! Instead of
Really yummy cake! Instead of the coffee, i melted down some dark cooking chocolate and mixed that in with the boiling water. The cake rose massively - glad i added extra baking paper to the sides - FOLLOW THIS TIP! Tastes almost like a mud cake but is slightly fluffier. I was surprised that it wasnt insanely sweet, given how much sugar it contains. Will make again but with less sugar next time.

Moist, delicious, easy to make, what more can I say but this is THE chocolate cake for me. It took 1 hour and ten minutes in my oven. This is a big cake,the batter comes up to the maximum level of the TM31 so measure carefully. Thank you very much for this wonderful recipe.

This is my go to chocolate cake for birthdays! Super easy and so reliable. I have a rubbish oven so need to cook for longer but that's normal for every recipe fo rme.

I wanted this to be my GO TO fave chocolate cake. And it's very moist! But it doens't taste like chocolatey enough for me. I might try it again and increase the cocoa.The 30cm tin is a great suggestion and it is a great cake to ice as it's not crumbly.

I made this last night iced with chocolate buttercream and dusted with blitzed white chocolate rocks it was amazing so light and not at all overly sweet as I feared with the amount of sugar will definitely make it again
Wanted to share that I made
Wanted to share that I made this cake on Good Friday with the intention on taking to work the following Tuesday. It was still so moist that everyone thought I had made it the day before. Will definitely be my new go to chocolate cake recipe.
