Vanilla Poached Pear & Almond Cake

Ingredients

  • 8 small baby (Corella) Pears
  • 1 vanilla bean
  • 1250 g water
  • 440 g sugar
  • 2 strips of lemon peel
  • 40 gToasted Almonds
  • 40 g dark chocolate
  • 60 g almonds
  • 125 g Butter
  • 165 gcastor sugar
  • 3 eggs
  • 160 g sour cream
  • 100 g plain flour

Recipe's preparation

    Grind sugar on speed 9 for 10 seconds. Add water, lemon peel, vanilla bean, split and seeds removed and also added to water and sugar mix.

    Bring to a simmer cook for 10minutes on Veroma on speed soft spoon.

     

    Peel pears and place in steamer basket and lower into syrup and cook for 20minutes on 100 deg on soft spoon.

     

    Remove pears in steamer basket and set aside. Reduce syrup for 40 minutes on Veroma on soft spoon.It should be half the volume and thick...if not keep cooking! Set aside.

     

    In a clean bowl  grind raw almonds into almond meal on speed 8 for 10 seconds, set aside.

     

    Add chocolate and toasted almonds and rough chop on speed 4 for 6 seconds.

     

    Add butter, castor sugar, eggs and sour cream and 2 tblsp of the syrup to the TM bowl.  Mix on speed 7 for 20 seconds.

     

    Add plain flour, self raising flour, almond meal and chopped almonds and chocolate. Mix on speed 4 for 6-10 seconds until just combined.

     

    Pour into a greased and lined spring form tin and then place the baby pears into the mix (you may need to slice a bit off the bottom of the pear to make it sit straight).

     

    Bake on 160 deg for an hour until a skewer comes out clean. Cool and baste with the syrup.

     

    Serve with syrup on the side and cream or ice cream.

    Had some pears that needed using and chose this recipe! My pears were not corella pears so larger than used in recipe (I used 6 as thats what I could fit in the pan!). There was too much syrup in the bowl to fit the pears in simmering basket in so I took some syrup out to cook the pears then added it again after they had cooked. Also, I cooked the syrup for 80 minutes and it still didn't thicken but it did reduce. 

    The finished result was devine. Thanks!

    Mum and I made this last night - it took ages to make, but it was worth it! Absolutely delicious.

    The husbands weren't too interested in whole pears so maybe next time we'll cube them, but for women it was perfect!

    <one day, I will get around to doing this properly...>
