Vegan Paleo Ice Cream Almond & Coconut Biscuits

Ingredients

650 g

Base

  • 250 g almonds
  • 50 g cacao beans, or Cacao Nibs or Powder
  • 50 g coconut oil
  • 30 g Agave, or Honey
  • 20 g honey

Top

  • 50 g almonds
  • 50 g Desiccated Coconut, or Freshly Grated Coconut
  • 10 g vanilla extract, or 1/2 qty Vanilla Paste
  • 10 g Agave, or Honey
  • 15 g honey
  • 65 g Almond milk
  • 50 g coconut oil

Recipe's preparation

  1. The Base

    Place 250g of Almonds and 50g of Cacao Beans into the Thermomix bowl. Mill on speed 9 for 5 seconds.

    Add 50g of Coconut Oil, 30g of Agave Nectar and 20g of Honey to the bowl blend on speed 5 for 40-50 seconds.

    Using a muffin tin, or mini muffin tin (For better portion control) press the mixture into each mould evenly. Set aside in the refrigerator.

    Please Note:You don't need to wash the TM bowl if you clear it out as thoroughly as possible before moving on to making the Top.

  2. The Top

    Place 50g of Almonds in the Thermomix. Mill on Speed 9 for 5 seconds, scrape down the sides and repeat if you want a smoother consistency.

    Add 50g of desiccated coconut and blend on speed 5 for 5 seconds.

    Add 10g Vanilla Extract, 10g Agave Nectar, 15g Honey, 65g Almond Milk (preferably pre frozen into ice cubes) and 50g of Coconut Oil into the Thermomix bowl. Blend on speed 5 for 30 seconds.

    Get out the muffin tray you have already pressed the base into. Now evenly distribute the top mixture on each of the base pieces. Put in the freezer until set. (Best to leave overnight).

    When it has set, remove from the muffin tray and put in zip lock bags and store in the freezer.

    Makes 24 mini muffin sized biscuits

Tip

Make sure the Vanilla Extract is organically made so it remains Gluten Free if you are trying to keep gluten free.Agave is a controversial ingredient to some so it can easily be replaced with Honey. If you don't want it to be so sweet you can decrease the amount of honey or agave used in the recipe.

    Super recipe - easy to follow and the end result looked exactly like the picture - BONUS!  The result was really nice and something to definitely have on hand during school holidays when everyone else is reaching for a Magnum!  I took mine out and let them sit a few minutes before serving.  Small enough to eat with your fingers, no spoon required!  Thank you!!!
