Watermelon and Strawberry Cake

Ingredients

Watermelon Layer

  • 300 g Seedless Watermelon, thinly sliced (about 1 cm thick)
  • 3 tablespoon Rosewater
  • 2 tablespoon caster sugar

Almond dacquoise

  • 150 g almond
  • 150 g icing sugar
  • 5 eggwhites
  • 135 g caster sugar

Rose scented cream

  • 0.30 l thickened cream
  • 30 g caster sugar
  • 2 tablespoon Rosewater
  • 1 pinch salt

Top layer

  • 500 g strawberry, halved
  • 2 tablespoon pistachios, chopped

Recipe's preparation

    Watermelon Layer
  1. Arrange watermelon slices in a single layer on a wire rack.

    Sprinkle with 3 tablespoon of rosewater.

    Sprinkle with 2 tablespoon of sugar (optional).

    Leave to soften (30 mins) than pat dry.

     

  2. Almond dacquoise
  3. Preheat oven to 200C.

    Meal almond and sugar, sp9, 10-15 sec.

    Use a clean bowl, insert butterfly, sprinkle a little salt in bowl and add egg white, 37C, sp4, 3 - 4 min.

    Watched closely through the hole.

    Slowly add sugar when soft peak formed, mix until stiff peak.

    Remove bowl from TMX.

    Gently fold through almond mixture.

    Spread on flat oven tray (30 x 40 cm) lined with baking paper, bake for 10 - 15 mins or until golden brown.

    Set aside to cool on tray and cut in half once cooled.

  4. Rose scented cream
  5. In a clean bowl, add cream and sugar, sp4, 1- 2 min.

    Watch closely through the hole.

    Slowly add rosewater when soft peak formed.

    Mix until stiff peaks form.

  6. Assembly
  7. Spread 1/3 of rosewater cream over one half of almond dacquoise.

    Top with watermelon slice, trim watermelon to fill all the gaps.

    Spread 1/3 of rosewater cream on watermelon.

    Top with other half of almon dacquoise.

    Spread remaining rosewater cream.

    Refrigerate until firm (1 - 2 hours).

    Soak strawberries in remaining rosewater and sugar, while the cake is setting in the refrigerator.

    Pat dry strawberries and add to cake.

    Sprinkle with Pistachios and petals.

    Tried this cake at a coffee shop in Newtown and then found this recipe in thermomix language. Love it, Thankyou.
    Have made it about 5 times now and think I have perfected it.
    It’s quite easy - really! Just follow the instructions.
    i have been known to grate a bit of chocolate over it but it really didn’t need it.
    its a great summer dessert and I think people only invite me to their get together because I bring this contribution.

    Had a watermelon cake at a wedding. Loved it so thought I make one myself. Turn to the trusted community site and found this recipe  which was lovely. I reduced sugar in the meringue and omitted it in the cream. Nice and refreshing. Everyone loved it
