  • 100 g castor sugar
  • 100 g Soft brown sugar
  • 1 egg
  • 300 g SR flour
  • 200 g white chocolate melts
  • 100 g almonds
  • 50 g pistachio kernals

Recipe's preparation

    Biscuit Dough
  1. Pre heat oven to 180C

    Insert butterfly and cream butter and sugar speed 3/30 seconds.  Repeat 

    Add egg and mix 10seconds/speed 4

    Remove butterfly, add flour, nuts and chocolate.  Mix on interval for 1 minute, assisting with spatula until ingredients are well combined

    Roll mixture into balls and press down onto prepared baking trays approximately 3-5cm apart

    Cook in preheated oven for 10-15 minutes or until golden

Tip

Substitue almonds and pistachios with macadamia nuts , dried fruit or white chocolate for milk or dark.

    I used coconut sugar indtead of castor sugar and added some dedicated coconut (trying to use up ingredients in the pantry !!)  turned out beautifully !!
