White Chocolate Mud Cake

Ingredients

Cake

  • 300 g white chocolate, I use Whittakers
  • 200 g Butter, Salted
  • 250 g Milk
  • 165 g caster sugar
  • 2 teaspoon vanilla extract
  • 2 --- large eggs
  • 100 g Self Raising Flour
  • 250 g plain flour

Sour Cream and White Chocolate Ganache

  • 200 g white chocolate
  • 90 g sour cream

Recipe's preparation

    Preparation
  1. Preheat over to 160 degrees Celsius (145 degress Celsius fan-forced) 

    Grease a 20cm square or round cake pan and line the base and sides with baking paper

     

  2. Place chocolate into Bowl and chop Speed 8 5 Seconds

    Add chopped butter,  milk and sugar 

    4 - 6 mins 50 degrees Speed 2

    Make sure the mixture is velvety smooth (you may need to melt a little longer)

  3. Add vanilla and eggs

    Mix 5 seconds speed 5

     

  4. Sift in flours 

    Mix 10 seconds speed 5

    Again ensure it is velvet like consistency, mix more if not.

     

     

  5. Pour into prepared cake tin and bake 1 hour to 1 hour 20 checking by prodding a skewer into cake, it should come out without any batter attached.

    Loosely cover cake with greaseproof paper or a clean tea towel and allow it to cool to rrom temperature in pan.

  6. When cool you can ice it with the White Chocolate ganache or it can be stored in teh fridge and iced the next day.

    Store in airtight container in the fridge and bring to room temperature before serving.  Cake is suitable for freezing, iced or uniced.  

  7. Sour Cream and White Chocolate Ganach
  8. Grate White Chocolate in mixing bowl 10 sec/speed 8, scrape down sides of bowl

    Melt chocolate 2 -3 mins/ 50 degrees /speed 3

    Add Sour Cream and mix 10 sec/speed 5
