Whole Orange & Poppyseed Muffins

Print:
4

Ingredients

12 portion(s)

  • 200 g Butter
  • 130 g sugar
  • 300 g Self Raising Flour
  • 2 eggs
  • 60 g Buttermilk or Milk
  • 1 whole orange cut into quarters
  • 10 g poppy seeds
5

Recipe's preparation

    Whole Orange & Poppyseed Muffins
  1. 1. Preheat oven to 170C (fan forced). Grease 12 cup muffin tray

    2.  Place quartered orange and butter into mixing bowl and mix 10 sec/speed 8. Scrape down sides and mix for a further 7 sec/speed 8. Butter and orange should now be well combined (you will still see some orange peel through
the mixture but that is fine)

    3.  Add remaining ingredients and combine for 20 sec/speed 4. Scrape down sides and combine for another 20 sec/speed 4. Check to make sure all
ingredients are well combined. You will find the mixture will be quite thick.
This is how it should be

    4.  Distrubute mixture evenly amoungst the greased 12 cup muffin pan, and
bake for 20 minutes or until a skewer comes out clean or with crumbs, not
    wet mixture

Very easy. My daughter and her friend whipped them up, we reduced the sugar to 100g and left out the poppy seeds. These would be lovely with some chocolate chips added too. Thank you for sharing the recipe.

    Submitted by Kristeli on 7. June 2021 - 17:17.

I made these this morning for school lunches and it made 12 (6 hole) muffins and 12 mini muffins. I now have 3 of each left. I used 70g sugar as suggested in one of the comments, soy milk, Nuttelex. Aldi GF flour. I peeled/'minus pith' the orange before adding in, and added more milk as well as 3 drops of Young Living Tangerine oil. I would deem these a resounding success. Thank you

Yummo! I reduced sugar to 100g, added 2 more peeled oranges and swapped poppy seeds for several handfulls of choc chips. I had about 15ml extra of buttermilk leftover from a previous receipe, so just added that too!

    Submitted by Monj on 23. July 2018 - 15:00.

I used 2 whole oranges and took a skin off one as I love a really orange taste without the bitterness. I also lessened the sugar to 110g with a tsp of vanilla essence, added grated coarse dark chocolate (60g as recommended by another person) instead of the poppyseed, and a little more milk as I found the mixture way too thick. This was so light and fluffy and delicious. Thank you, so quick and easy to make! A favorite in our household!

    Submitted by Sharee_V on 1. January 2017 - 19:36.

I made these without a Thermomix. I followed all the instructions and used my Food Processer to combine the butter (which I substituted with Coconut Oil) and quartered orange. I then poured it into my bench mixer and whisked all the ingredients for the timeframe specified. Muffins are soft and moist and taste of orange. Great recipe!
