  • 225 gram plain flour
  • 3 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon bicarbonate of soda
  • 3 Bananas, large, very ripe, Roughly 225grams
  • 370 gram caster sugar
  • 2 eggs
  • 125 gram unsalted butter, chopped, Room temperature
  • 100 gram buttermilk
  • 1 1/2 teaspoon vanilla extract

Recipe's preparation

  1. Preheat oven to 180c or 160c fan forced. Butter and line a round cake tin.

  2. Put the flour, baking powder, salt and bicarb soda in the thermo bowl and mix on speed 5 for 20-30 seconds to combine. Set aside.

  3. Put bananas in the thermo bowl and puree them on speed 6 for about 30 seconds or until it is smooth. 

  4. Add the sugar and eggs and whiz everything together on speed 5 for 1 minute.

  5. Add the butter and whiz again on speed 5 for 1 minute or until the mixture is thick and creamy.

  6. Add the buttermilk and vanilla and pulse on and off gently using the turbo button, to just mix the ingredients.

  7. Add the reserved flour mixture and using the knead Dough mode function mix for no more than 5 seconds or until just combined. (It is really important that you do not overmix the mixture and if need be use a spatula to fold in any ingredient that appear not to have combined well) 

  8. Pour the batter into the prepared cake tin and bake for 45 minutes. When it is ready, leave it to cool in the tin on a rack for 7 minutes before turning it out onto a rack to cool.

  9. Serve with a dollop of thick cream, a cup of Yorkshire tea and a smile!

    Great cake, I will definitely make it again when I need to use up bananas. I did however substitue the sugar with 120g of coconut sugar. Next time I might try adding some chopped walnutstmrc_emoticons.)

    I was naughty and threw all the ingredients in the bowl and mixed JUST until it was smooth and mine worked beautifully! I get the whole 'don't overwork the gluten thing' but couldn't be bothered with all the steps. Also cut the sugar to 300g and used sour cream and a bit of milk instead of buttermilk because I had none - Ooh and added cinnamon too. Yum!

    I only had two bananas and only used 250g sugar - came up an absolute treat. Ate it warm... was melt in your mouth! YUMMY!!! Great recipe!!

    I have made this recipe, three times in three days and it's always turned out perfect.  Maybe check your oven settings.  Do your other cakes collapse in the middle?  Are you over stirring it in the final stage?  Are your bi-carb or  baking powder past their use-by date?  Don't give up.  Keep trying because this recipe is so worth it!

    Finally made this. I doubled the recipe as I had lots of spare bananas and buttermilk. Had to mix it by hand in the container I put the flour mix in. Also made as some cupcakes. This is a great recipe! Kids loved it. A bit sweet for me though so I will cut down the sugar next time.
