Zesty Lemon Moons

Ingredients

Zesty Lemon Moon Dough

  • 2-3 Lemon peel
  • 350 g Almonds meal, Blanched or unblanched
  • 200 g sugar
  • 1 pinch salt
  • 1 1/2 egg whites

Zesty Lemon Moon Icing

  • 150 g sugar
  • 2-3 juice of lemon, Use the lemon remaining from the dough preparation

Recipe's preparation

    Dough
  1. Place Lemon peel in TM bowl, chop 20sec/speed 7 (ensure chopped finely)

    Add almond meal, sugar and salt, mix 10sec/speed 5

    Add egg whites mix 30 sec/ Closed lid/Dough mode

    Ensure dough is mixed completely and take out of TM bowl.

    Roll out on ThermoMat, if sticky, use a little sugar to roll the dough out on. Roll to 5-7mm thickness and place on baking tray with baking paper.

    Allow to dry for 5-6 hours.

  2. Preheat oven to 160C

    Bake biscuits for 8-10 mins

  3. Zesty Lemon Icing
  4. 1. Place sugar into TM bowl, mill for 20sec/speed 10

    2. Add the juice of 2-3 lemons, mix for 10sec/speed 5

    3. Paint on biscuits after they have been taken out of the oven. Ensure biscuits are still warm
