Zucchini Brownies

  • 500 grams zucchini
  • 100 grams olive oil
  • 180 grams raw sugar
  • 2 teaspoon vanilla essense
  • 270 grams Self Raising Flour
  • 50 grams cocoa

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1.  Preheat oven to 180 degrees (160 fan force). 

    Grease and line a 26cm x 16cm slice tin.

  2. Chop zucchini roughly and place in Thermomix bowl.  Add oil, sugar and vanilla essence.  Mix Speed 7 for 15 seconds or until combined and smooth.  Scrape down sides of bowl. 

  3. Add flour and cocoa and mix speed 4 for 30 seconds.  Scrape down sides of bowl.  Continue mixing in 5 second intervals until fully combined. 

     

  4. Spread mixture in to prepared slice tin and bake for 15-20 minutes.  Test by intersiting a skewer.  It should come out relatively clean with just a little moisture. 

  5. Allow to cool in pan.  Once completely cooled, slice with a sharp knife.  Dust with a little icing sugar just before serving.

    I used half olive oil and half coconut oil. It smelled very strongly of vegies so I put chocolate icing on top. Both children aren’t a fan of the actual cake but happy to eat it with icing on top (which kind of defeats the purpose I think?!). The texture of the cake is lovely, but not sure if I’ll make this one again.

    Such a great recipe. I have done it twice and each time it needed just a little longer baking. My kids think it is the best and I was loving that they didn't know about the zucchini. Really light too. I did sprinkle some choc chips on top too.

    Excellent recipe. I used 50/50 coconut oil/olive oil, and also I’d run out of raw sugar so I used coconut sugar instead. I made mini muffins out of the recipe and they were just perfect. Such a quick and easy recipe. Thanks for sharing :o)

    Fantastic recipe that my hubby introduced us to. I've adapted today baking with wholemeal sr flour. Mixture looks good, can't wait to taste.
    I've also frozen the zucchini in 500g lots to make later in the year when my veggie patch is dormant.

    This was a great way to use up some homegrown zucchinis. My 10 year old daughter followed the recipe easily and they turned out to be lovely and fudgy. The only change she made was to use half olive oil and half coconut oil.

    Nice treat but not too sweet! I didn't use quite as much sugar so they weren't overly sweet but very nice chocolate flavour. They kept well in the freezer and defrost nicely, great for the lunchbox!

    Once main ingredients were all chopped up with zucchini, I was worried that is smelt a bit "green/leafy smell" - anyway carried on with the recipe trusting that it would all turn out okay, and I was PLEASANTLY suprised! Couldn't taste the zucchini at all! Such a quick and easy recipe.

    These are soooo yummy! I wish I didn't even tell hubby there was zucchini in the recipe! I am certain he would never have known! I did have to bake for an extra 20 minutes or so. I would love to know if you could use butter instead of olive oil? Has anyone tried this?

    Also, I froze half the batch for lunch snacks. Hopefully they defrost well!

    Made these for the first time and shared amongst children yesterday. A hit by everyone ! Sliced into squares and dusted with icing sugar. For me, the quanities of each ingredient was perfect ( not too sweet or rich). Thanks for taking the time to post this recipe. In my collection now.

    I'm impressed. Delicious and healthier than regular brownies. I cooked it much longer as per advice in previous comments. I also added some cinnamon, ginger and allspice as I was worried I would taste the olive oil.

    Made this today. I had to bake it for an extra 20 minutes as it wasn't cooked at each end. It's a nice, soft texture cake. Not as rich as other brownies I made, but this one does not use 200-300 grams of chocolate 😃
    For a healthier alternative, I give this recipe a thumbs up 👍

    The zucchini makes the brownie moist and you can't taste the vegetable content at all. The only change I made was swapping coconut oil for olive oil.

    Next time I'll use more sugar, and I'd have added nuts if my son's school wasn't nut free (darnit!) but the texture is fantastic and with the full amount of sugar the taste probably is too! (The one I made certainly didn't taste bad, the flavour was just not as intensely chocolatey as the brownies I buy. Though this one was a truckload healthier, so I'm still happy!).
