Andreas Pasta Sauce

Ingredients

4 jar(s)

sauce

  • 1 bunch herbs eg parsley, oregano and basil
  • 4 cloves garlic
  • 1 large onion quartered
  • 1 large carrot, diced
  • 800 grams chopped tomatoes, fresh or tinned
  • 400 grams water, use the tin to measure
  • 150 grams olive oil
  • 50 grams tomato paste
  • 2 heaped tablespoons sugar raw
  • 2 heaped teaspoons salt
  • 1 level teaspoon TM vegie stock concentrate
  • 2 teaspoon white pepper

Recipe's preparation

    sauce
  1. Place garlic,onions ,carrots and  herbs  into TM bowl and pulverise for 1 minute on speed 8.


    Scrape down sides of bowl and add oil


    Saute for 5 mins 100deg speed 2


    Add all other ingredients and cook 30 mins on varoma  on Gentle stir setting


    if too much "spitting" turn to 100deg for a few minutes til settled.


    Pour  into  sterilzed jars. 


    Cook a little longer to make thicker and if you wish to make tomato paste

Tip

use sundried tomatoes pulverised  as alternative to tomato paste!

recipe can be halved.

    helenpap: Helen, everything depends on your "canning" process or how you jarred the sauce. Wrapping in Newsprint (which is great) will do you no favours if your seal is compromised or your temperatures fluctuate over 5oC + or - .

    If your seal is in perfect condition, your jar was sterilised correctly and you jarred your contents at above 100oC then it will last years - but you need to carry out quality control inspections every 6 months when storing inside the home.

    You can join various homesteading groups on facebook for solid advice on how best to "can" or preserve for long term use successfully.

    Made this for the first time today. Delicious only had 600g fresh tomatoes. Only added 90g oil, 23g paste and 250g water, 1 teaspoon Sugar and 1/2 teas salt. Delicious. Placed in sterilised jars in pantry. Does anyone know how long this would last in pantry wrapped in newspaper please

    I made a half batch of this today but it was so peppery I adjusted to make a full size batch (except for the pepper, olive oil and sugar) and cooked further 10 minutes. It's worth a read through all the comments before trying out this recipe for the first time. Absolutely delicious and will be my go-to tomato-based pasta sauce from now on. I used Ardmona extra thick tinned tomatoes and also added a little red wine. I would recommend halving the pepper, olive oil and sugar, but obviously everyone's tastes are different.

    I've made and varied this recipe so many times. Its my base and it's great. I drop the olive oil to 50g, replace the sugar with 15g caramelised balsamic, use 1kg of fresh tomatoes, drop the water down to 150g and I add 50g of red wine. I do a pinch of salt and pepper. I always use fresh basil.

    If I'm serving this on pasta I tend to water this sauce down with pasta water. I use the sauce as is to top grilled chicken. I often water this sauce down and cook meatballs in it too.

    Yum! I will definitely be making this again. I used our homegrown tomatoes, and being concerned that it would be too watery, I reduced the oil to 50g and the water to 300g. Also, added a Chili and used black pepper instead of white (one teaspoon). It did need another 5 mins.

    Amazing recipe! used fresh basil and parsley with 1 tbsp of dried oregano, 100g olive oil, zucchini and a red capsicum also. I think the brand of tinned tomatoes you use is important too. Will be our staple now 😍

    This is the second time I have made the recipe and it is absolutely beautiful. The 1st time I made it exactly as suggested less 50 g of oil. The 2nd time I didn't have an onion so added celery and zucchini in the 1st step and blitzed 10 seconds 7 speed plus a little fresh chilli and it was still absolutely delicious. I could eat it by itself. We have it with ricotta gnocchi and on pizza bases.

    I used fresh tomatoes. The potential for flavour was there however I couldn't get the sauce to thicken, it was a runny consistency even after another 30 mins cooking. The 150gms olive oil?? Surely that's not correct. 15 grams maybe? I also think using fresh rather than tin tomatoes made a difference in the watery result.

    I wish I hadn’t have been in a hurry and had read the comments (as I usually do before trying a new recipe) as the sauce, although very tasty, was far too sweet for our liking.

    I had added wine and chilli so it was still a yummy sauce to throw my (Natasha’s Kitchen recipe) meatballs into. 👌🏼

    Have made this recipe quite a few times now. I usually freeze it in 2 batches for future use. Then, depending on what I have in the fridge, use it as a base for various pasta dishes. Sometimes I add bacon & salami with some chilli paste, other times sauteed vegetables like zucchini and capsicum with chilli paste for a vegetarian option. Very tasty!

    Wonderful! This is a top notch recipe, absolutely delicious! We all found it very salty however so next time I would not add the salt (there is enough in the stock). I cooked it for an extra 15 minutes and the flavours were lovely intense and the sauce thick enough to hold it's own on pasta. I also added some artichoke hearts (on reverse at sp. 1 for 5 minutes) at the end, halved the pepper and it was just scrummy! Thank you for sharing this with us all Smile

    We make this recipe often once or twice a week. It is such a versatile recipe, I can easily add whatever sad veggies I have and it always turns out delicious. Everyone loves this. We use it as a pasta sauce, as a lasagne sauce, as parmigiana sauce, you name it. I recently ran out of vege stock and it still worked brilliantly.

    This is my go to recipe. I have been making this for over a year. I use about 100 grams of oil and add an extra carrot as well as a zuchini . I sometimes add red wine. It makes about two jars. I use this sauce as a base for pizza sauce, creamy pasta sauce and lasagna. Love it!

    A lovely sauce, however I don’t generally add pepper to my food. I followed the recipe, and put the two teaspoons of pepper, however only put 115 grams of oil. This was way too peppery for me, next time I will use my judgement with the pepper. I will deffinately make it again with no where near as much pepper.

    Thank you so much for this recipe.. I did it exact and it was so tasty! This is an amazing base.. The first thing I have made with it is a creamy chicken pasta.. I just added the sauce added 200gs of Cream Diced chicken and cooked for a further 10mins at 100 sp1 added the pasta and sprinkled cheese and it was so easy!! Thank you tmrc_emoticons.-)

    Beautiful! I added mushrooms and celery and some wine instead of all water. I also added lots of herbs so the sauce didn't end up very red in colour (more brown) but tastes divine. I used fresh tomatoes and tomato paste made with sundried tomatoes. Thank you for sharing.

    Didn't add any sugar or salt and 100g oil as per comments below. Chucked in left over butternut squash and a stick of celery. Coriander was what I had to hand. It is beautiful...smooth, thick, sweet and rich. (800g fresh whole plum tomatoes went in) Will definitely make again. Thanks
