Busy Mums Creamy Vanilla Yoghurt

  • 1500 grams Milk
  • 100 grams milk powder
  • 80 grams sugar
  • 1 teaspoon vanilla extract/essence/paste
  • 6 tablespoons Starter Yoghurt

Recipe's preparation

    Busy Mums Creamy Vanilla Yoghurt
  1. 1. Place milk, milk powder, sugar and vanilla into TM Bowl. Mix 10sec/Sp6


     


    2. Cook 33min/90deg/Sp3


     


    3. Place milk mixture in bowl with lid on in fridge overnight


     


    4. In the morning, take your milk mixture out of the fridge and Cook 3-4min/37deg/Sp3. (The 37deg light must stop flashing to ensure it has reached 37deg before next step, cook for a little longer if needed)


     


    5. Add 6 tablespoons of starter yoghurt (This is natural pot set yoghurt, or reserve 6 tablespoons of your finished product to use as starter yoghurt for your next batch)


     


    6. Mix 4sec/Sp4


     


    7. Cook 10min/37deg/Sp3 While this is cooking, boil your kettle and put boiling water in Thermoserver to preheat. Empty water and quickly dry Thermoserver)


     


    8. Pour mixture into Thermoserver,put lid on Thermoserver, wrap in a thick towel and leave to sit undisturbed for 9.5 hours.  (at least 8hours, I like to leave mine for 9.5hours) I leave mine in my oven away from little fingers and sticky beaks Wink


     


    9. Once set place in refrigerator to chill before eating.

Tip

Make sure you start with a very clean TM bowl. You can add or reduce sugar to suit your taste. You could remove sugar and vanilla to make Natural Yoghurt. Do not be tempted to peak into the Thermoserver while the yoghurt is setting, do not touch it at all. This is a great recipe to cook after dinner, put in the fridge overnight and take out in the morning to do the final cooking steps before leaving to sit for 9.5hours. No waiting around for the temps to drop etc. I take out 6 tablespoons of yoghurt once it has set, and put that in a separate container in my fridge so it doesn't accidentally get gobbled up!

    I've tried 3 other yogurt recipes and I've found that this is by far the best and most reliable. So thick and creamy, not overly sweet. Just gorgeous..... Does it work just as reliably if when the amounts are halved? Just wondering if it affects the cultering in the thermoserver at all.

    This is yum! I was a bit worried at first wondering whether I had made it right, no need to worry it was lovely and creamy. I am trying to convert my husband from commercial yoghurt to homemade, he thinks its not sweet enough. I have noticed the longer the yoghurt is kept the more tart it becomes not sure why.I would like to freeze some yoghurt in small containers but would like to know what it is like when thawed out. I might have to make half recipe next time because it wont get eaten in a week. Also I have noticed very tiny lumps in the yoghurt almost like a grainy look if that makes sense, but it doesn't feel grainy on the tongue. Thank you for sharing this recipe I will be making it regular and maybe a bit sweeter so my husband will eat it and will use vanilla bean seeds next time.

    Hi there!  I've never added fruit until actually serving the yoghurt.  You would need plain yoghurt without the fruit for the starter I would imagine.  I've never encountered a scrambled egg consistency,  I'm wondering if that's just from stirring the whey in?  Mine is thick and creamy the whole way through.  Sorry I'm not much help to you tmrc_emoticons.(

    Hi, I've just made your yoghurt for the very first time. I have a few questions for you..... Do you put the thermomix jug straight into the fridge (step 3) after heating the milk or do you let the milk cool first? My yoghurt looked nice and thick when I first unwrapped it from the towel. I added some frozen berries through it before chilling in the fridge. Underneath the thick top the yoghurt was runny and looked like it had a scrambled egg like texture to it. Is this normal? Have I done something wrong or will it get thicker like your photo the more yoghurt I make from the starter? Also can you use yoghurt with fruit added as a starter or does it have to be plain? My yoghurt tastes nice, I just don't like the appearance so much. Any ideas? tmrc_emoticons.)

    Hi there,  sorry the original recipe was based on using the TM31. You just need to make sure the temperature is at 37 degrees tmrc_emoticons.) once it reaches 37 degrees you are good to go, it won't over cook it as long as it doesn't go above that temperature tmrc_emoticons.)

    Hi. I have made this a few times snd has worked out everytime but can you please explain me what it means when the 37d stops flashing. The only thing that flashes on tm5 are the green lights that never stop flashing. And there is the 'C sign below the number that flashes. Ive just noticed now because i am making it that the 'C sign has stopped flashing and the temp bar has a small blue line because its been cooking for 10min. 

     

    Last time i did make this i think i over cooked the initial part because i was waiting for something to stop flashing to make sure it reached 37 but nothing did.

    Hi Wendyroo,

    You can just use any pot set yoghurt from the supermarket as your first starter. You can buy little tubs of pot set yoghurt. Jalna is my preference, but whatever you like.  Once you have made your batch of yoghurt and it has set, scoop out your 6 tablespoons to use as your starter yoghurt for your next batch. You can keep this in the fridge or freezer (depending on how long it is between making batches). Good luck tmrc_emoticons.)

    What a lovely time saving, money saving recipe!  I hadn't attempted any thermomix yoghurt until I saw this recipe - I just didn't have the time to fuss with all the straining etc that I thought every yoghurt recipe involved.... not this one!  The perfect busy mum's recipe!  So simple, so yum!  

    I never use milk powder.  I always use light blue top milk.  And I always stir in the small amount of whey that sits on the top - no waste with a thermie!  It turns out perfect every single time.

    I've been looking for an easy, simple yoghurt recipe since getting my thermo and this one didn't disappoint! I omitted the milk powder because I don't like the taste it gives but I still ended up with a thick creamy yoghurt. Plus I have the tm5 thermo and will now use this recipe over the automatic one!

    I added ALL the ingredients failing to notice not to add starter yogurt then cooked for 33 mins and cooled it in the thermoserver before adding it to the fridge and it worked fine. Next time I must pay attention to the steps!

    Hey, i have made your yoghurt recipe several times & all have been perfect. Yesterday's batch when I unwrapped it from sitting 9 hours the surface was all split & little bubbles appeared. When I poured it out, there was lots of whey & it was all lumpy. What hapenned for it to split? Any clues?

    I used full cream milk, no milk powder ( cos I didn't have) a small sprinkle of kiefer powder as the starter and fresh vanilla pod! 

    we ate half of it in one day!

    Wow! That is the best yoghurt I have ever made! I replaced about 250g of the milk with cream that needed using up and added a couple of extra tablespoons of a previous batch of homemade yoghurt. The result was so thick and creamy. The kids say its 'healthy icecream'!

    Hi Shireena,I took a pic of it and asked a FB page as it was considerably bubbling over - advice was to turn the speed up slightly (like with rice bubbling over) or down. I just took the MC off and put it on it's side for a while to let some steam out. I used all the right amounts as per the recipe so thought it was odd. After setting for 9.5hrs in a cold oven and wrapped in a thick blanket, the texture was beautiful and it tastes great. I have some in my 1.5L pyrex and also filled 3 pouches for my 19mo to enjoy. Thanks for sharing. I will make this again!

    I used my homemade changing habits vanilla bean paste and it tastes great and looks lovely (vanilla flecks throughout).

    I've never had any issues with the milk bubbling over. Did you have the correct amounts? Correct temps etc? Sorry I can't offer advice because it's never happened to me before.

    I make this yoghurt with 1litre of no fat milk and 500mls of 99% fat free milk. I omit the vanilla and sweetener  and make it plain, I also leave it for 12hours before putting it into the fridge containers. I have made six batches and each one has turned out  nice and thick.

    This morning I have made a new batch adding an extra 10grams of skim milk powder and a full 200grams of  pot set yoghurt  will let you know if this makes it creamier. Either way it is a thick tasty yoghurt

    I haven't tried freezing the starter, but I've read on many other recipes that you can, as long as you defrost in the fridge before using it.

    I have a friend who has a child with a dairy allergy, and wants to try and make soy yoghurt in my Thermomix. Has anyone tried this using soy milk and soy starter? Or have a good recipe they could recommend?

    Best yoghurt I've ever made (and I've made lots - Easiyo sachet yoghurts, from scratch with powdered milk yoghurts, other Thermie yoghurt recipes, etc etc)! Already eaten heaps of this batch and it's not even properly cold yet! I used rapadura sugar and halved the recipe as we don't normally go through 1.5 kg yoghurt in a week - worked very well, so I'm definitely pleased with this one! Think I just added an extra bit of powdered milk and starter yoghurt as I love mine extra thick tmrc_emoticons.). Thanks for the awesome recipe!!
