If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Insert Butterfly whisk. Pour pure cream into the mixing bowl, beat for 1-3mins/speed 4 or for as long as it takes the solids to separate from the liquid.
Remove the butterfly whisk
Place the simmering basket over a bowl, pour the contents of the "Closed lid" into the simmerng basket and drain off the liquid. Reserve the buttermilk for future uses.
Place the solids back into the "Closed lid" , add the water and mix for 10-15 sec/speed 4. The solids will separate from the liquid. Pour solids into the simmering basket and drain. I do not reserve this liquid for future use at this stage.
Place solids back into the "Closed lid" , add the salt and grapeseed oil. Mix for 5-10sec/speed 4.
Either roll into shape or place into jar/container for use. Refrigerate

I would love to know if anyone has sourced where to buy 'dairy salt' - it is much finer than any other salt and purer also. means you dont get that grit texture when your not expecting it! Its what they use when making butter commercially..... any suggestions would be so helpful thank you!!

Turned out perfect...used home brand thickened cream, added 10g grape seed oil and touch of salt, made half a normal butter container, about 250 g I guess.
