Eggs & Spinach in Ramekins

Ingredients

  • 4 ramekins (or similar - eg sicilicon muffinc / egg poacher)
  • 50 grams Butter, grease Ramekins
  • 1 cup Baby Spinach Leaves
  • 1 - 2 tablespoon finely chopped green onions
  • 4 cherry tomatoes, diced
  • 4 eggs
  • 1/3 c cream
  • freshly grated / shaved parmesan to server
  • toast to server
  • 1000 grams water

Recipe's preparation

  1. Butter insides of ramekins (use some kitche paper)

  2. Line each ramekin with some spinach leaves, green oninos and diced tomatoes. Squash slightly and leave a small indentation in center.

  3. Break an egg into each ramekin. Pour over 1 1/2 tsp of cream, 1/4 tsp butter (optional). Season with salt & peper (optional).

  4. In Theromix bowl put 1000 gr water. Put Varoom unit on top and arrange ramekins. Put lid on.  Set to Varoma temperature, Speed 2 and 14 mins.

  5. Check that eggs are set to your liking, if a little soft, set to Varrom temperature & cook for another minute.

    Serve with toast and grated cheese (I prefer paramean, others in my house like cheddar, fetta or no cheese !)

Tip

This can be varied depending on what you have to hand, can use diced ham, smoked salmon, mushrooms, diced fetta, peperonata, left over mash potato (or other vegetable mash), cooked asparagus, silverbeet (or any greens) instead of baby spinach leaves
