Jamie Oliver's 1 Cup Pancakes

Ingredients

Pancakes

  • 1 apple, Cored and quartered
  • 1C --- flour
  • 1C Milk
  • 1 egg
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder

Yoghurt Topping

  • 1C Jalner Natural Yoghurt
  • 1/2C blueberries, fresh or frozen, (fresh is better)
  • 1 teaspoon cinnamon

Optional extras

  • Maple syrup
  • walnuts

Recipe's preparation

  1. Place apple pieces in thermomix bowel, grate on speed 5 for 5 seconds, scrape down the sides of the bowel and repeat.

    Add remaining pancake ingredients and mix well on speed 4  for 20 seconds.

    Cook pancakes in a pan till bubbles show on the surface. The second side will take less time.

     

    Prepare yoghurt topping:

    Place all ingredients in thermomix bowel and combine for 5 seconds on speed 4. 

     

    Serve pancakes topped with yoghurt and mayple syrup.

Tip

The original recipe from Jamie Oliver uses mango instead of blueberry. I like the health benefits from blueberries, cinnamon (antioxidants and many many more), natural yoghurt (protein and calcuim with out the fat) and the fact these are low in fat, minimal added suger (depends on how much mayple syrup you use) yet taste sweet and are very filling. 

 

The cinnamon and blueberries make natural yoghurt very edible if you're not usually a fan (like me).
