Ingredients

Thermomixing_nia's Granola

  • 330 g rolled oats
  • 85 g pecans
  • 85 g almonds
  • 50 g pepitas
  • 1 tsp sea salt, fine-grain
  • 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 200 g dried fruit, mixed, chop if large
  • 40 g Shredded coconut
  • 75 g coconut oil, melted
  • 50 g honey, runny

Recipe's preparation

    Oven Baked Granola
  1. 1. Pre-heat oven to 180°C, line 2 large baking trays with baking paper/sheets
  2. 2. Place pecans and almonds in bowl and chop 3sec/speed 5
  3. 3. Add pepitas, oats, salt, cinnamon, dried fruit and shredded coconut, stir 10sec/Counter-clockwise operation"Counter-clockwise operation" /speed 4
  4. 4. Add melted coconut oil, honey and vanilla extract, mix 10sec/Counter-clockwise operation"Counter-clockwise operation" /speed 4
  5. 5. Pour granola onto baking trays and spread evenly across the tray
  6. 6. Bake for 10-12 minutes, remove from oven and stir. Bake for a further 10 - 12 minutes until golden brown
  7. 7. Let granola cool on trays for 45 minutes. It will crisp further as it cools
  8. 8. Store in an airtight container at room temperature.

Tip

You can use any combination of nuts of your choosing
You can double this recipe, but you may need to transfer to a large bowl to stir all ingredients thoroughly
You can use any combination of dried fruit of your choosing. If using larger fruit E.G. Dates, apricots, chop into smaller pieces.
Serve dry, with milk or topped with home-made Thermomix yoghurt and fresh fruit

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
