TM5 Coconut Yoghurt

Ingredients

1 litre(s)

COCONUT Yoghurt

  • 3 can 270g Ayam Coconut Cream
  • 2 teaspoons agar agar powder
  • 150 g Coyo or other starter coconut yoghurt
  • 1 portion probiotic powder
  • 1 tablespoon Maple Syrup or other sweetener (Rapadura sugar)
  • 1 litre Jar

      TM 5
      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Make sure you bowl/blades/lid/MC is clean and dry
  1. Add Coconut Cream & Agar Agar to bowl and cook 100 deg, speed 3 for 5-10 minutes (Agar Agar need to reach 100deg to activate, you will get a much thicker yoghut by doind this)

     

    Allow the mix to cool to about 60 -70 deg then proceed to the yoghurt  Automated Recipe of the Thermomix 5

     

    Add remaining ingredients into bowl and set thermomix to Youghut in the Automated recipe and let it do it's thing! 

     

    After 8 hours when the TM5 has let you know its finished tip into a large clean jar, the yoghurt will still be rather runny but dont worry becuase once you put it into the fridge it will become thicker, if you like once it has set you can add it back to the thermomix bowl and whip it for 5 - 10 secs.

    Yes it’s creamy but to me it just tastes like I’m eating thick coconut cream. I usually like the taste of natural yoghurt because of the sour taste. Is there any way of getting this sour taste with the coconut yoghurt so that it tastes more like a natural yoghurt?

    Hi - I don't use maple syrup at all. I don't like the flavor of maple syrup in coconut yogurt (or the colour). The coconut sugar is my replacer. If it's for your daughter (and she's like my son - needs a bit more sweetness) you might add 2 tbs of coconut sugar. I use a variety of probiotics as long as they are over 60 bil CFU. I don't know where I read this or if it makes a big difference but I always have aimed for over 60bil. So if I need to use 2 pills, I do. Currently I have Dr Mercola probiotics with 70bil in one pill. Also, like others say, if it looks a bit thick and the gelatin (or agar agar) appears to be sitting on the top, I give it a quick blitz before starting the auto function. Yes, such a money saver to make your own. I only make occasionally now because I can eat a double batch in a few days. Wink

    I love this yogurt recipe! So simple and turns out perfect every time. For those struggling with agar agar, I use 2 tsp of Great Lakes Gelatin (red can). It's a huge can that ends up a fraction of the price of agar agar. Also a great egg replacer for other recipes. I use 1 tbs of coconut sugar and half organic coconut cream and half organic coconut milk. I still get the temp to 100, then with MC out, spin at 3 until back to 60 degrees. I always double this recipe and it works perfectly. Thank you for a fail proof yogurt recipe every single time.Smile

    Just made this for the first time overnight. To my suprise it had already become quite thick in the thermomix - had to blitz it before I took it out. I used plain dairy yogurt as my starter (as I don't have a problem with dairy am just trying to reduce my consumption) and sweetened with two tbsp of xylitol. I think its going to be yummy. Also a hint re agar agar powder - a small bag at my local healthfood shop was $21 - I nearly died! I decided I didn't need to make the yogurt after all, but then checked an asian grocery store - the sachet was about 1/4 the size but only cost $1.99. I'm not sure if agar agar is as prohibitive at other health food shops, but if it is, now you know where to try instead.

    I tried it with the 2tbs of agar agar heated for 2 minutes and it came out grainy but yes it was thicker eating it up. Not sure why it was grainy for my second batch. The first batch was coyo starter with probiotic and the second batch was my own starter with the vanilla poweder stired through with the probiotic poweder and heated the agar agar for 2 minutes after it reached 100degrees.

    I have made this a few times and reading the comments thought I would share my outcomes.

    Definitely need to heat the agar for two minutes once it reaches 100 degrees

    To cool down quickly  just set on speed 4 for 6 minutes at no temp and it will cool down faster

    You can take it out if you are a TM 31 owner and put in Thermoserver wrapped in a towel or alternatively a Easyo Thermos

    Once it has set over night in the fridge - you can whip for 5 seconds in the Thermomix to get a creamy texture.

    1 can coconut milk and one can of cocnut cream of 400g - often  comes in this size

    We have used this particular recipe in cooking classes and everyone wants the recipe - it is great. Thanks

    I tried the new version with 1 tsp of Agar Agar and the yoghurt was very very think and grainy. More like pot set yoghurt, not creamy like co-yo. Have you had a go with the new recipe?

    I've changed the recipe a little bit, hope you all enjoy it! A good Thermie friend of mine told me that Agar Agar needs to reach 100deg for several minutes to help it activate so i have added another step, you can even cut the Agar Agar back down to 1 Teaspoon if desired - Let me know how you all go and if you enjoy it.  Much love Jo

    I've had mine seperate once & i put it down to not enough Agar Agar, all i did was put it into the tmx bowl and whip it on spd 2-3 for a few seconds.  The next time i made it I added more Agar Agar and it was fine.  Hope this helps xx

    used ALDI coconut milk and 190g of my own dairy yoghurt as a starter.

    Great recipe, worked well after sitting in the fridge for 12 hours after taking it out of my thermie tmrc_emoticons.) was not overly thick but normal yogurt consistancy possibly might try add a little more agar next time if i wanted it thicker and I could not get coyo at my local supermarket so just used jelna coconut one.

    For all those wondering about what 1 portion of probiotic powder is if your using capsules and just using the powder inside the portion is whatever the label on the bottle prescribes for one days dosage

    I was a bit skeptical that it was going to work but I put this on in my TM5 overnight and went to bed, in the morning I had yoghurt.  Please note it thickens up beautifully after about 24 hours in the fridge.  A huge cost saving over buying it so I will definitely make this on a regular basis  Cooking 7

    Is there an answer to this from anyone? From what I can figure out with the recipe chip the machine came with that has the EDC loaded, are you just looking in this reference for 'Automated Recipes' then I am guessing 'Plain Yoghurt' but instead of following what is there you add your ingredients right? 

    Anyone know of a soy youghurt or light yoghurt varient?
