- 150 grams whole almonds
- 75 grams Pepitas Seeds
- 60 grams sunflower seeds
- 40 grams Shredded or shaved coconut
- 100 grams slivered almonds
- 100 grams dried fruit - your choice-sultanas/dates/prunes/apricots/apple/pear
- 200 grams rolled oats
- 100 grams coconut oil
- 180 grams honey
- 2 teaspoons vanilla essence

Recipe's preparation
Preheat oven to 180 degrees and line some large trays with baking paper
Grind almonds on speed 9 for 10 seconds - leave in bowl
Add remaining dry ingredients and mix "Counter-clockwise operation" reverse speed 3 for 15-20 seconds until combined
Add honey, coconut oil and vanilla essence and mix "Counter-clockwise operation" reverse speed 3 or 4 for 20-30 seconds till combined well - use spatula through lid opening to assist if needed
Spread out on baking trays as a thin layer and bake 5-10 mins, take out, stir so it bakes evenly
Spread out thinly again and bake for another 5-10 mins till golden in colour.
Will crisp on cooling. Store in airtight container.
Usually takes 3-4 batches in the oven (depending on tray sizes)

Tip
For a supersize mix (as my family love it) add about 300 grams of rolled oats and increase the coconut oil to 130 grams and the honey to approx 200 grams. The other ingredients can remain the same, but you can add some more in if you wish. This makes a full 2 litre Thermie bowl full of muesli.

Absolutely delicious!! I made a supersize batch and it only lasted a few days as little hands kept getting into the jar and helping themselves. Yummy with milk or yoghurt or just to nibble on. About to make another batch...let's see how long it lasts this time. I added cinnamon and tweeked recipe a bit to accomodate the ingredients I had. Seriously good!!

Thanks for the recipe. We love it. I halved the honey and added dried fruit (goji berries, mango, cranberries etc) after baking and cooling as we don't like our fruit harden from baking. I make a batch every week and change the fruit combination.

Delicious, can't get enough
Delicious, can't get enough of it in our house! I add more oats and dried fruit to make it go further. I divide the mixture over 3 trays and mix it about every 5 minutes as it can brown very quickly. Perfect snack on top of yogurt too!

I have made this recipe many
I have made this recipe many times. I substitute maple syrup for honey. I use 300g oats so it goes further. I do not use as much oil as suggested. I have experimented with different types of oil but the I like the liquid coconut oil best. We usually eat it with yoghurt so it stays nice and crunchy.

Never buying store muesli again! Delicious healthy recipe. The whole family loves it. I do the large batch and use way less honey (about 80g) which is plenty sweet. I use LSA meal instead of the sunflower kernels and sultanas as the fruit.

This recipe was easy to make and turned out delicious! I didn't have coconut oil and didn't know what to substitute it with - I didn't replace it with anything and it still turned out crunchy and full of flavour. We have been eating it for breakfast but also grazing on it during the day as a snack! This will be a regular in our house. Thanks for sharing it!

I only used 100gms of honey
I only used 100gms of honey because its all I had but it still turned out perfectly. I mixed dried fruit through it once it had cooled. Devine as a snack or breakfast

This is great to nibble on any time of day but best sprinkled on top of yoghurt and fruit or just mixed in with milk as a breakfast cereal alternative.
