Dough
- 300 grams Milk
- 75 grams Butter
- 1 tsp salt
- 1 tsp sugar
- 475 grams flour
- 10g grams Dried yeast or 1 satchet
- 1 lemon rind (grated)
- 50 grams oil, or 1/4 cup. Ive used Olive oil & Rice bran in this recipe before)
Bacon Filling
- 20 grams Butter
- 250 grams bacon cubes
- 1 brown onion, halved
- Salt & Pepper to season

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place milk, butter, salt, sugar into the mixing bowl, and heat for 3 minutes/ 40 degrees/ Speed 1
Add flour, yeast, lemon rind to bowl. Have your oil ready to pour into bowl lid as the mixture is combining on, 15 secs/ Speed 3
Knead the mixture for 2 minutes/"Dough mode"
Dough will be soft, not sticky. Roll into a bowl, and wrap into Thermomat or in a clean dry bowl (Covered with a tea towel or cling wrap) and leave to prove in a warm area for approx 30 minutes or double in size.Clean and dry mixing bowl.
Place onion in bowl and chop for 3 seconds/ Speed 5
Scrape down sides of bowl.
Add Butter to bowl and saute for 3 minutes/ 120 degrees/ Speed 1
Add bacon to bowl and combine for 5 seconds/ Speed 2"Counter-clockwise operation"
Remove from bowl to cool, and season well with salt and pepper.
Preheat oven 200 degrees.
Knock down dough, and cut into 4 even amounts. Using one ball of dough at a time, roll into an oval shape and cut into smaller even amounts. I make about 6-8 for each roll. (Slightly bigger is easier to handle to begin with)
Roll one into oval shape (Roughly palm size, see picture)
In a small bowl, whisk egg and milk with a fork. Use a pastry brush to brush over each roll lightly.
Bake in oven for 15 minutes.

Tip
Pīrāgi are a Latvian crescent shaped roll filled with bacon & onion.I loved converting this recipe as it was passed down to me by my Nan who made these for us since I was a child.
They're traditionally used as an appetizer or for a light lunch.
Plain or baker's flour can be used in the dough. I have used both.
