The Bestest Bread Rolls Ever

  • 310 g Luke Warm Water
  • 1 sachet dry yeast, (or 1 Tbsp or 7-8g)
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 510 g bakers flour
  • 30 g extra virgin olive oil
  • 1 teaspoon bread improver, (optional)

Recipe's preparation

    The Bestest Bread Rolls Ever
  1. Add ingredients in the order they are writtenTurn slowly to speed 6 and mix for 10 seconds

  2. Lock Lid Closed lid , Set timer to 1.5min, Knead Dough mode

  3. Oil it up, roll into a ball and prove in bowl until doubled in size or at least 10minutes.

  4. Cut into 8 pieces and shape and put in cold oven 180-190C or 170C fan forced, for about 20 minutes.

    (we do this so that the rolls will prove a 2nd time whilst in the oven and then they will cook once the oven gets to certain temperature)

Tip

When you take them out of the oven, the top should be slightly brown, sides will be white and top will be hard. the longer you leave it there to cool, the softer the bread will become.Remember it is flour, so if you turn the dial up to a high speed, you will get it all stuck on the lid, if you do it slowly you shouldnt have anything on the lid.

I prefer to shape my 8 rolls like small hotdog rolls. They are easier to eat.

    I haven't made these yet, but I'm wondering why you would add the salt almost on top of the yeast. Surely putting the flour before the salt would be the way to go?

    Made these today, so quick and turned out beautifully. I did let the dough prove for 30 minutes before shaping into the 8 rolls. Definitely a keeper recipe, Thank you Smile

    The first time I cooked these I was a little bit underwhelmed. I found them to be dense and a little lacking in flavour I totally rushed the first prove as I was running short on time and only did the minimum 10 minutes. I decided to give them another shot given how many reviews there were & I'm so glad I did!


    I did a 30ish minute 1st prove this time, 22 mins at 190c & added an extra half teaspoon of salt and this time they came out perfect. Thanks for an awesome quick and easy recipe.

    Great recipe however I did something wrong. I could have severed mine with jam and cream, they tasted more like scones. I must say I didn't have the scales on when I added my first scoop of flour, so had to guess. I'm not experienced with pastry, so I had to manipulate and roll a bit of get the right shape, maybe I squashed the air out if them. I will try them again and make adjustments to my oven, I cooked them a bit longer as they didn't brown. I will also use a milk wash next time.

    Already said these were awesome in another comment but forgot to mention th at I did let it proof for a good 30-40 before rolling into buns and putting in the oven. The dough was super risen and light which I think made for a lighter and fluffier end result 👍

    Only addition is I'd brush the tops with a milk wash before putting in the oven as they were a bit blonde. But definitely the best buns I have ever made and will make again!! Probably tomorrow 😉

    We live in Luxembourg, and light fluffy breadrolls are an unknown here. These are fantastic. My husband devowed 2 within minutes of them coming out of the oven. I did leave in my proving bowl for 30 minutes, and cooked for around 25 minutes (from cold to finished)/

    I think mine would have been better with a second proving. I found them a little doughy. Will use the recipe again but I will prove them for at least 30 mins after shaping and bake for 15mins at 200c

    Thank you for a wonderful recipe! It was so easy and quick.

    I made 12 round rolls and they were light and perfect with broccoli cheddar soup (TM). I used Tuscan seasoning in place of half of the salt and sprinkled the tops with olive oil and sesame seeds. The trick with the cold over is a gem. So clever to save time. I loved how 10 min wrapped in a silicone mat was enough time to double in size.

    A tip for a warm place to rise - I heated a stock pot with hot tap water, emptied it and added the my wrapped dough bundle to warm and rise.

    I’ve been looking for a quick roll recipe for years! It’s the best one!Smile
