  • 170 grams warm water
  • 3 teaspoon castor sugar
  • 1 level teaspoon salt
  • 3 teaspoon dried yeast
  • 3 teaspoon soft butter
  • 290 gram bakers flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon all spice
  • 1/2 teaspoon mixed spice
  • 1 teaspoon bread improver
  • 30 grams sultanas
  • 30 grams currants

Recipe's preparation

    Method:
  1. Place water, sugar, salt and yeast into mixing bowl.  Heat 1 min and 30 seconds / 37C / Speed 2.

     

    Add remaining ingredients.  Knead 6 min / Closed lid / Gentle stir setting.

     

    Gently roll dough into a ball. Place dough in lightly floured bowl, cover with plastic wrap and allow to prove in warm place until doubled in size.

     

    Press out dough lightly on a floured board until dough is a roughly 25cm x 25cm square.

     

    Fold the dough into shape by taking top corners of dough and folding it over remaining dough to about the 2/3 mark.  Then take top left corner and fold about 2/3 of the way over dough.  Then take top right corner and fold over the top of the dough.  Dough should now resemble a wedge shape.  Roll up the dough from thickest to thinnest.

     

    Place in greased loaf tin with the seam facing down.  Use a knife to cut a slit about 1/2 cm deep down the length of the dough.

     

    Allow dough to prove for another 30 mins.

     

    Bake in oven for 20-25 mins.

    making this for the second time, really enjoyed it straight out of the oven previously. I haven't worried about folding it into a shape but will be cooking it in 2 seperate baking dishes this time as it didn't cook through 100% on first attempt. I also haven't added the currents or all spice because I keep forgetting to buy them. The kids really enjoyed it and keep asking for it.
