KOZINJAK - MACEDONIAN EASTER BREAD

YEAST MIXTURE

  • 80 grams luke warm milk
  • 20 grams dried yeast OR 3 sachets
  • 1/2 teaspoon raw sugar
  • 2 teaspoons bakers flour

DOUGH

  • 160 grams raw sugar
  • 3 eggs, room temperature
  • 170 grams WARM milk
  • 2 teaspoons vanilla extract
  • 80 grams vegetable oil
  • 750 grams bakers flour
  • 10-20 grams ground mahlepi, (found in most European deli’s)
  • handful sultanas, (optional)
  • beaten egg (egg wash)
  • sesame seeds to sprinkle

Recipe's preparation

  1. Place warm milk in jug, add yeast, sugar and bakers flour.  Stir with spoon and leave to activate.

  2. .  Place sugar into TM bowl speed 9, 10 seconds.

    .  Add eggs speed 5, 10 seconds.

    .  Add warm milk, vanilla extract and oil speed 5, 10 seconds.

    .  Add bakers flour, mahlepi and yeast mixture.  By this time the yeast mixture will have doubled in size to look like the above photo.

    .  If you like add handful sultanas (or more).  I prefer kozinjak without sultanas, but up to you!

    .  Knead on interval for 2.5 minutes.

    .  Place dough onto ThermoMat (or well oiled bowl) and leave to rise till doubled in size (about 30/40 minutes)

    .  Once risen. hand knead to knock out air and divide into 2 portions.  

    .  Divide one of the portions into 3 and plait.  Repeat with the second portion of dough.

    .  You will end up with 2 plaits.  Place them into oiled baking tray, cover with teatowel and leave in a warm place to rise for about 2 - 2.5 hours.  It is important to make sure the plaits prove for this long to give you fluffy light kozinjak.  The longer you leave it, the better the result.  The plaits should more than double in size.

     

  3. .  Egg wash and sprinkle with sesame seeds.

    .  Place in cold oven, set temp to 180deg.  Bake for 17-20 minutes.

  4. Finished product, you get 2 loaves of Kozinjak.  ENJOY tmrc_emoticons.)

Tip

THIS RECIPE IS SUITABLE FOR ALL THERMOMIX MODELS!!

If you can't find mahlepi, you can use lemon rind.  It will be a different taste though.  Mahlepi is what makes the Kozinjak taste so awesome tmrc_emoticons.;)

You can use other oil, as long as it is flavourless and without strong odour.  Otherwise it will come through in the bread and affect the result (taste).

I used microwave to warm the milk, make sure it's lukewarm and not too hot, otherwise it will kill the yeast.

    Delicious while warm but once cooled the bread was super dry. Followed recipe exactly and left to prove for 2.5hrs. Any tips would be greatly appreciated
