  • 2 teaspoons dried yeast
  • 330 grams water
  • 600 grams Bakers Four
  • 2 tablespoons salt
  • 1 teaspoon raw sugar
  • 15-20 grams extra virgin olive oil
  • 120-130 grams mixed grains/seeds

Recipe's preparation

  1. Put yeast and water in the mixing bowl and heat for 2 mins at 37 degrees on speed 1

  2. add flour, seeds and grains, sugar, salt and oil

     

    mix for 6 seconds on speed 6, and repeat

  3. knead for 8 minutes on interval settingDough mode

  4. put dough in oiled bowl withe cling wrap tightly over

    place in a warm area and allow at least an hour for the dough to rise and double

  5. shape dough into a loaf tin and place in a cool oven with a tray of water in the bottom of the oven.

    set oven to 200 degrees celcius

    after reaching heat allow 15 minutes before removing the water tray

    continue to cook for a further 15 minutes then take bread out of loaf tin and cook for approx 10 more minutes or until golden brown

  6. remove and allow to cool on wire rack

    you will need to store (once cool) in a air tight container as without bread improver your loaf won't last as long

Tip

without bread improver, the proofing in a warm place to double the size is of most importance!

    Bread came out nice and fluffy. I used apple cider vinegar as improver. Will reduce salt next time round.
