Ingredients

750 g

Bread Dough

  • 2 teaspoon Himalayan salt/Celtic Sea Salt, any salt you have
  • 560 grams bakers flour
  • 2 teaspoons instant dried yeast
  • 2 teaspoons Bread Improver (Optional), see notes
  • 40 grams Soft Butter or Ghee or olive oil
  • 300 grams filtered water, tap is fine also

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Dough Prep
  1. Add all ingredients listed in the order of the list and using the Dough mode dough function set time to knead for 10 minutes and turn dial to start. Wrap in a Thermomat or place in an oiled bowl with cling film to cover. Rest dough in a warm spot until doubled in volume. I just place it in my cold oven and the doughs own warmth is enough heat for the proving process.

  2. Shaping Your Loaf
  3. On an oiled bench or Thermomat knock down dough until it's fairly flat and all the gasses have been expelled. Roll into a log the length of your bread tin and place it in. This is great for a nice even high top or an even flat top if using a lid. The log can also be cut into 3 or 4 sections with cut edge facing the sides of the tin for a fancier top to your loaf. Place in a cold oven until your dough rises 2/3 of the way up the tin sides. In cooler climates you might want to add a tray of boiling water to the bottom of your oven for this process to be successful.

  4. Bake Your Loaf
  5. Without removing your loaf from the oven turn oven on to 180°-200°  and bake until golden brown and sounds hollow when tapped. This could take between 30 - 45 minutes. When loaf is baked empty from tin straight away and cool on a cooling rack before slicing.

  6. Choose Quality Ingredients
  7. This recipe was developed as a variation of the Basic Bread in The Basic Cook Book and the White Bread recipe featured on the back of the Defiance Brand Bakers Flour 5kg bag.I strongly advise seeking advice on max quantities of dough mix for your thermomix when kneading larger quantities in your machine.

Tip

Bread Improver is an additive, it improves the fluffiness and shelf life of your bread. Read the label and do some research if you are concerned about this item. This can be omitted or replaced with a more natural alternative such as 2 teaspoons of fresh lemon juice or 2 teaspoons of apple cider vinegar. The tin featured in my photos is a jumbo loaf tin.

A smaller tin can be used just give it a try with what you have or you can purchase from the thermomix Australia mix shop

    Super easy, I don't even bother with expensive bread flour now, I've been using home brand plain flour and still getting amazing results.

    We've been using another bread loaf

    recipe for ages with no intention to change as it was OK. But last week my son started school and needed a sandwich daily which is when I realised the existing bread was far too dense and dry for a lunchbox (fine for toast though)
    Lookibg for a new recipe that was lighter and less dense led me here and I've just removed the most magnificent loaf from my oven! Thank you for such an easy and great recipe!!

    I added 10gm of sugar and I used 15ml of ACV instead of the bread improver. Worked a treat!

    Tried lots of everyday bread recipes but they only stayed soft as long as they were warm. I have now made this numerous times both white, wholemeal and seeded loafs and it works each time. It is a great everyday sandwhich bread.

    First time I have ever made bread, sorry but it was a flop with this recipe! Or maybe it was me? Took forever to rise in the warm spot, maybe the spot wasn't warm enough? It didn't double in size as expected. I cooked it anyway, it was 90 minutes in the oven and still came out doughy and hard at the same time. I'll try again!

    ive tried other ones and nothing has come even close to it, hubby has asked that I don't buy bread from the shops again, l must say I agree with him, I'm going to try your finger bun recipe today and freeze them for our lunches.     Fantastic! Unbeleivable bread. The dough is so smooth. No mess. And rises beautifully. I made this twice on Saturday and it was perfect both times. Needless to say both the loaves were gone the next day.  And so simple! Thank you, thank you. This is my white bread recipie.

    I love this bread recipe, it produces the softest, fluffiest bread I've made yet (and I've tried a few). I do substitute 100 grams of the flour with 100 grams of mixed seeds that I mill prior to adding the other ingredients. This dough is strong enough to hold the seeds without sacrificing texture and it adds a beautiful flavour.
