Paleo Bread Recipe

Ingredients

0 portion(s)

  • 170 grams Flaxseed, Golden or Brown or a mix of both
  • 20 grams sesame seeds
  • 4 --- large eggs
  • 60 grams olive oil
  • 125 grams water
  • 3 teaspoons baking powder, heaped
  • 1/2 teaspoon Salt and pepper
  • 60 grams Sunflower seeds or Almonds

black sesame seeds optional

Recipe's preparation

    Preheat Oven 175 degrees.
  1. Add flaxseed, sesame seeds, sunflower seeds  or almonds to Thermomix Bowl. Grind for 10 secs/speed  7.

  2. Add 4 large eggs or 5 small eggs (duck eggs work well), olive oil, and water. Mix 20 secs/speed 6

  3. Add baking powder, salt and pepper. Mix 10 sec/speed 5

  4. Line a loaf tin with baking paper (230mm long, 100mm wide at bottom and 130 mm wide at top) 


    Place mixture into baking tin.  You can sprinkle a small quantity of black sesame seeds 

  5. Bake in preheated over 175 degrees for approximately 30 minutes

Tip

You can use any mixture of seeds and nuts to quantity of 250g.  Using a mixture of brown and golden flaxseed, I think, is much nicer but you can just use one.  This is also lovely toasted and a lovely accompaniment to my Creamy Spinach and Cashew Soup.

    Macro:I tried the recipe again and added about 70g tapioca flour to firm the bread up a bit! It worked really well - has a firmer texture and still tastes delicious! Toasts well too! Thanks again!

    I've only just come across this bread recipe! So easy to prepare! I agree with some other comments that around 40-50 mini s a good cooking time. I cooked it just over 30 min. It sank a little after I removed it from the oven, so I think the extra time would have helped maintain the height! It has a very soft texture and it is certainly very tasty! I'm trying to get a loaf that I can substitute for the paleo bread I buy - which costs about $14 per loaf! So I wondering what I can add to make it a bit denser!
    All in all, the size is great and it has a lovely flavour! It also toasted well! Many thanks for the recipe! tmrc_emoticons.)

    This didn't work for me at all I am sorry.  I have a tempermental gas oven, and even cooking it for 45 minutes, it still didn't taste cooked, and none of the family could eat it.  A shame, as my son doesn't like the taste of coconut or pumpkin and this recipe only had 4 eggs, so Ithought it would suit us.

    I love this recipe, it is foolproof and you can literally use any seed or nut you have in the pantry as long as you reach the weight.  I find using more chia seeds also gives a fluffier texture.  I also keep it in the oven for longer (approx 40-50mins to give it a crust).  The closest thing I've found to bread since going gluten free/paleo.

    OMT (Oh My Thermomix)!! This is the paleo bread I've been looking for!! I've made it now about 8 times and it works perfectly every time, although mine needs about 40-45 mins baking.  The loaf slices so well and is perfect for sandwiches. I also made little bread rolls using a muffin tray (and filling each hole only half way). Perfect for a little mini hamburger pattie.  Sensational recipe.

    Yum! Delicious with great texture. Wonderful hot out of the oven with butter - haven't tried toasting it yet. Would be fabulous with the yummy spinach and cashew soup.
