Potato/Sweet Potato Bread

Ingredients

Potato Bread

  • 200 g Potato or Sweet potato
  • 1000 g water, for cooking
  • 160 g water, cold
  • 1 tsp Yeast
  • 15 g olive oil
  • 300 g bakers flour
  • 1 tsp salt

Recipe's preparation

    Potato Bread
  1. Wash and chop the potato/sweet potato into 2 cm chunks (I leave the skin on).

     

    Place the potato in the simmering basket and add 1000g water to the TM bowl. Cook for 12-15 minutes, Varoma, Speed 2 or until just cooked. Remove the basket and discard the water.

     

    Insert the butterfly. Place the potato into the TM bowl and mash for 20-30 seconds, speed 3-4 or until smooth. Add the cold water and mash for a further 5 seconds, speed 3. Remove the butterfly.

     

    If the temperature has dropped to 37C or below, add the remaining ingredients and knead 2 minutes Closed lidDough mode. If the temperature is above 37C, wait until it has cooled to 37C then proceed with this step.

    Check the consistency of the dough, if it is too sticky, add more flour 50g at a time, if it is too dry add more water 20g at a time. Knead for 30s after any additions.

     

    Turn the dough out onto a thermomat or floured surface and knead briefly to form a tight ball. Wrap and leave to prove for 30-40 mins or until doubled in size.

     

    Knock down and shape into desired shape on a baking tray or place into bread tin (I use a small tin, 340g, 18x11x10cm). Leave to prove for a further 30-40 mins or until just at the top of the tin. Preheat oven to 200C.

     

    Slash the top of the loaf (optional) and place bread into the oven and bake for 30 minutes. I switch my oven to bottom element only for the last 10 minutes.

Tip

Try adding some rosemary or thyme for more flavour. Chop the herbs with the flour before (10 seconds speed 10) cooking the potato.

    Great recipe. I blitzed the mashed sweet potato and water until it was well mixed together, then added dried onion, garlic and Italian herbs along with the bread flour. I rolled out 2 pizza bases and had enough left for a small loaf. The pizza bases were lovely and crunchy. Having the loaf toasted for breakfast this morning so cant comment on that as yet. Looking forward to it though.

    Very nice bread and easy to make. I microwaved the sweet potato to avoid extra water and so did not need any extra flour. Proving in my oven was easy and I added a burst of moisture before baking. Delicious

    This has become a family favourite in my house, such yummy bread. I have been using pumpkin instead of sweet potato as I had loads of them, and it has made such gloriously coloured loaves. I love that it also sneaks some vegetables into my children!

    Heaven help us - we are half way through it and its not even 2 hours out of the oven!

    Delicious. Added the additional 100g of flour, a few chopped rosemary sprigs from the garden. and ended up ditching the butterfly as my sweet potato was still a little hard. This did not matter, i chopped it, scraped and chopped again then continued on. I think it's my favourite! I split the dough to make one regular loaf and one small; 2/3 1/3 split. Baked for 20 minutes and it was spot on.

    Ps this is my second time making and I think its even better than the first!

    This is a definite hit in our house every time! I have to make it like 3 times a week to keep the hubby and kids happy as they are addicted!

    I sometimes add a little sprinkling of grated mozzarella cheese to the top in the last 10 mins of baking for a bit of extra yumminess

    Awesome recipe! I use at least an extra 100g flour to get it to combine well and it rises beautifully, really good crumb and lasts in the fridge for about a week, also great toasted. My kids normally don't eat sweet potato so it's a great way to smuggle it into them tmrc_emoticons.-)

    I'm so pleased I tried this recipe. I used sweet potato which I found took 18 minutes to cook. This batch needed an extra 50 g of flour. I made it as a simple cottage loaf with some sesame seeds on top. It has kept pretty fresh for 2 days, has a nice colour and makes beautiful toast. It was so nice I will make it exactly the same next time, before I try using potato in the recipe. Highly recommended.
