Savoury Bread Scrolls

Ingredients

Dough

  • 100g Whole wheat grain, (or rice, barley, rye, sunflower seeds, linseed, etc)
  • 300g water
  • 2tsp Dried yeast or 20g fresh
  • 20g Olive Oli
  • 1tsp sea salt
  • 400g bakers flour
  • vegemite & parmesan for filling, (optional)

Recipe's preparation

  1. Place wheat into Closed lid and mill 1min/sp9 and set aside.  Place water and yeast into Closed lid and heat 1min/37degrees/sp1.  Add remaining ingredients, including milled wheat and mix 6sec/sp6, then knead 2min/closed lid/Dough mode.  Transfer dough onto mat and wrap or place into a bowl and cover with tea towel.  Prove in a warm place for half hour or until doubled in size.  Once dough is ready, roll into a sausage shape and cut with spatula into small portions, then roll into small balls.  Flatten each ball with your hands (oil your hands if dough is sticky) to an elongated rectangular strip then with a bread knife.  Smear a little vegemite and sprinkle with grated/milled parmesan cheese.  Roll up into a scroll and place scroll side up onto baking tray (lined with baking paper).  Continue to do this with remaining balls of dough, leaving approx. 1cm space between each one so that when baked they will join together.  If you are feeling artistic, dough scrolls can be placed in 2 circles (with a centre scroll) on your tray to form a flower shape once cooked tmrc_emoticons.)

    Place tray in cold oven at 200 degrees C and bake 20-30mins until golden brown.

Tip

This recipe has been adapted from the Basic Bread ingredients in the new Everday Cookbook, p137.

A variation would be to add whole sultanas, or olives to your bread in the last 30 seconds of kneading time.  Perhaps fill the scroll with stewed apple and cinnamon and then roll it up.  Be adventurous.....
