Soft Beef/Chicken Floss Bread

  • 35 grams Butter
  • 5 grams salt
  • 100 grams Bread Flour (high protein flour)
  • 150 grams all purpose flour
  • 35 grams white sugar
  • 4 grams dried instant yeast
  • 10 grams milk powder
  • 2 pieces egg yolks
  • 1/2 piece egg (whole)
  • 150 grams fresh milk
  • 50 grams mayonaise
  • 15 grams condensed milk
  • 100 grams chicken / beef floss
  • 1 piece egg yolk
  • 1 tablespoon evaporated milk / fresh milk

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Close mixing bowl lid, place a bowl and measure 35 grams butter, 5 grams salt, mix them with spatula when the butter starts to soften (but not too soft).
  2. Add 100 grams Bread Flour, 150 grams All Purpose Flour, 35 grams white sugar, 4 grams dried instant yeast, 10 grams milk powder. Mix 10sec / sp.3
  3. Add 2 pieces egg yolks, 1/2 piece egg (whole), 150 grams fresh milk. Knead the Dough 2 min.
  4. Add 35 grams butter and 5 grams salt which had been measured and mixed before, to the dough. Knead the Dough 4 min.
  5. Scrape the dough with silicone scraper. Form the dough into a ball and rest for 40 min
  6. Then shape into balls (40 grams each), round them and rest them for another 15 min
  7. Then flatten each of them with rolling pin, and flip to the dough's other side, and roll it, pinch the edges, and place the dough on a bread paper cups. Rest them for another 30-40 min
  8. Grease the dough with 1 piece egg yolk + 1 tablespoon evaporated milk / fresh milk. Then bake them for 12 min, on 170 C. After they are baked, grease them again with margarine / butter (if desired)
