Recipe's preparation
Place yeast, water, sugar, butter, salt and milk into TM bowl and warm for 2 minutes at 37ºC on speed 2.
Add egg and flour and mix for 10 seconds on speed 6.
With dial set to "Closed lid" closed lid position, knead for 2 minutes on Interval speed"Dough mode" .
Turn out onto floured ThermoMat and bring dough together into tight ball. Wrap and prove until doubled.
Form into rolls and place on paper lined tray. Brush with melted
butter and allow to double again before baking in 200ºC oven for 12-15
minutes or until lightly golden.Serve warm.

Terrible.
Followed ingredients and instructions to the proint. Ended up with Heavy dough rocks. Waste if my time and ingredients.
Dough was a dry mess after kneeding, didn't rise after either prove.
My version of the Everyday Cookbook doesn't...
My version of the Everyday Cookbook doesn't mention the water so initially I had crumbles rather than dough. I added water, though less than the online recipe calls for (I hadn't looked at the online version at that stage). I found the TM31 struggled to mix and knead the mixture. I also noticed that this version of the recipe varies the order the ingredients are added. The dough didn't rise sufficiently - probably because it wasn't sufficiently moist - but I baked the rolls anyway to check the taste. Nothing special. I will give this version of the recipe a try. I had a similar problem with the hot crossed bun recipe - the Everday Cookbook version didn't work but what I guess is an updated online version worked fine. I wonder how many of the recipes in my Everday Cookbook have had revisions 😶.

Hi Addicted 2 Thermi and Sue in the bay,
If you do change milks in this recipe, the outcome will not be the same...the rolls will be heavier. To ensure you are getting a light roll, you must make sure that you are proving the dough the first time until the dough has doubled in size and again the second time until the dough has doubled in size again. Make sure your dough is proving somewhere warm to assist the process.

Can you use almond milk instead of buttermilk for a dairy-free option? I have dairy-free butter, but not sure about the milk...
