Theo's pizza dough

Ingredients

5 portion(s)

Pizzas

  • 500 grams 00 flour
  • 10 grams dried yeast
  • 5 grams salt
  • 5 grams sugar
  • 300 grams cold water

Recipe's preparation

    Theo Kalogeracos's pizza dough that made him a world champion pizza chef twice over. Converted to TMX.
  1. Mix all ingredients on speed 4 for 10-15 sec until combined.

    Leave to sit for 10 minutes.

    Dough mode Knead for 3 minutes

    Place in an oiled bowl and cover for approx 30 min

    Punch down and separate into 4 balls, roll each out thinly then let rest 10 min.

    Top with toppings and bake at 220 degrees for 10-12 min.

     

     

     

  2. This will make 4-5 pizzas depending on how big / flat you roll them.

    This dough recipe has been halved from the original, double everything to make 8-10 pizzas.

    it's a special flour used to make bread and pastas. Most supermarkets stock it. I didn't know about it until I looked at this recipe either!

    This turned out wonderful in the Ovana pizza oven. Not only made pizza but also Pides and pizza pockets (roll out dough, brush top with oil, fold in half - the oil prevents the 2 pieces from sticking together).

    Easy to make, and rose magnificently in cooking. We brushed the outer edge with garlic infused olive oil.

    highly recommended and very popular....better than store bought and not much effort

    Our go to pizza dough recipe. I use Luke warm water and add dried oregano, garlic powder and onion powder to the recipe for even more flavour. We no longer buy take away pizzas!!

    soopoo54: I would freeze after rolling out or you'll be waiting much longer for the ball to defrost. Another option is to roll out and cook the base with no toppings, so you have precooked bases all ready to go in the freezer ( and they won't stick to each other). A further option is to make the pizza dough and cook the bases then allow to cool then put on toppings but leave the toppings uncooked. Freeze these separated with baking paper. I make about 20 mini ones for the term and my son throws them in the air fryer for ten minutes at 180° For an after school snack.

    Cant see how to vote but give it 5 stars. Made this for my first attempt at making dough / pizza and even my Italian neighbour was in awe of the pizza crust which we cooked in our wood fired pizza oven. I used bakers flour as it was already on hand. Also one comment said the measurements equalled 3 tspn yeast and 1 of salt and sugar. My T5 weighed it as being 2tspn yeast- not 3 and they rose perfectly. I used warm water too after reading comments. Thanks for the recipe!!😁

    I've been experimenting with different recipes lately. I think I can stop now as this one was a winner for us. Had a bit left over today that I spread with oil/garlic and topped with mozzarella, tasty and parmesan. It was divine!!

    sandyb: did you find your answer to this? i'm not sure how it's different but it's a type of italian flour, used a lot in pasta making. it produces a lighter pasta than regular flour. it is literally called '00' flour or '00 farina'

    I made this twice tonight. It turned out so well that I decided to make another batch for the freezer. Rising the dough in 2 large glass bowls that have been oiled first. I flipped the dough over so all sides were oiled too and covered the bowl with clingwrap. They're rising in the oven as there is some residual heat left from previous cooking. Yummy!

    Love this pizza dough recipe. I’ve never been a fan of pizza but that is because its usually takeaway. My two grandsons were having a sleep over and they love pizza so seeing all the good comments I decided to give this one a go and was not disappointed. No more takeaway.

    Lovely pizza dough. Very reliable. I’ve made two batches now, and froze half of the first batch, then used it after thawing in the refrigerator, and was happy with the result. I won’t be looking for another pizza dough recipe anytime soon. Smile

A single zero flour is quite coarse in texture, like very powdery semolina, whereas triple zero is much finer like cornstarch. But everyday flour is usually classed as double zero, or '00'.

    This pizza dough will be my go-to from now on! Love that it doesn't need to prove for hours or overnight like many reccomend. I also used Bakers Flour instead of 00 as it's what I had on hand - no issues using it either. Easily made 5 thin bases for us - flavour was great and they crisped up perfectly. If you haven't tried it, you should!
