One of our favourite parts of getting a new cookbook, is choosing what dish to make first! With over 70 recipes to choose from, we’re making the decisions a bit easier with recipe suggestions from the team who worked on the cookbook.

Spiced hot chocolate

This hot chocolate has all of the indulgence of a chocolate fix, minus the guilt! I dry roast the spices for a few minutes before milling them, which adds an extra level of deliciousness, and use different varieties of black tea (such as Chai or Earl Grey) for extra flavour.

 

Turkey breast roulade with apricot and hazelnut stuffing

This recipe is one of my favourites purely because while it looks like it took hours to prepare, it’s actually so simple. The turkey, apricots and Dijon mustard pair so well together… it’s a beautiful meal when you want to spoil the one you love.      

 

Frozen strawberry mousse with cream cheese frosting

This is by far my favourite dessert recipe in the entire book (and I really love my desserts)! It’s the perfect recipe for one, since you can make them on the weekend and treat yourself throughout the week. The tart flavour of the balsamic reduction balances so well with the sweet strawberries, and it only takes a few minutes to prepare. I keep a bottle of the White balsamic reduction in my pantry, keep a bag of frozen strawberries on hand and use mint from my garden. It’s almost too easy!

Beetroot smoothie

This is a very popular way to start the day in our house; it’s full of nutrients and so quick and easy. I love beets and all the health properties they offer. In fact, sometimes I make this just to enjoy the gorgeous colour!

 

Spicy cauliflower soup

So simple, so quick and both gluten and dairy free, which is a plus in our household. I have the Curry powder pre-made, so this can be on the table in 15 minutes. I also keep gluten free bread pre-made and frozen to serve on the side. It’s the perfect mid-week meal after a long day.

Ham and cheese quinoa muffins

These muffins are quick and easy, and are a healthier option for lunches. It’s a good way to add an extra serve of veg into your day.

 

Pancetta, pine nut and ricotta pappardelle

This pasta dish is just really yummy! It doesn’t take long to pull together, and I often make fresh ricotta in the Thermomix since it adds a gorgeous flavour and texture.  

 

Spice-rubbed chicken with maple glaze

For a simple and delicious mid-week meal, this recipe is hard to beat. The sweet and spicy flavours (with a side of salty polenta chips) hits all the right notes.

Pork and apple cider stew

I really enjoy cooking a risotto-style dish with pearl barley as I love the texture, and this stew has a fantastic mix of flavours. The perfect all-in-one winter warmer!

 

Asian-style mussels

I’m a fan of chilli mussels but the Asian-style sauce in this one – POW! Perfect flavour combinations of chilli, coriander and coconut milk. My husband and I treat ourselves to this delicious meal paired with a glass of crisp white wine.
