roast chicken leftovers
Just thought I'd share my new favorite sandwich filling using up the roast chicken leftovers!
few sticks of celery
handful of walnuts
tablespoon of dried Tarragon ( or equivalent fresh if you have it)
I then use the chicken carcass to make chicken stock.

If you have acopy of the latest calendar, check out the Kalamata olive and raisin dip. Actually the combination of salty and sweet is very tasty! One lot of olives was extremely salty so be careful. I ran out of raisins recently and substituted, currants and prunes - it was divine! And I was making one of those sensational pizza bases - I had some roast chicken in the fridge, and the aforementioned dip - I placed these on the pizza with some roasted pumpkin, red onion and tomato - sprinkled that with mozzarella - on my God! manna from heaven!
