Almond 'Bounty' Balls

Ingredients

Filling

  • 150 grams Shredded coconut, (1 1/2 cups)
  • 2 tablespoons coconut oil
  • 2.5 tablespoons Maple syrup
  • 75 grams natural almonds, (1/2 cup)
  • 1 teaspoon vanilla essence

Coating

  • 1/4 cocoa, cup
  • 1/4 coconut oil, cup
  • 1 tablespoon Maple syrup, (optional)

Recipe's preparation

    Filling
  1. Describe the preparation steps of your recipe

  2. 1. Place all filling ingredients in the jug and blitz on Sp 7 / 5 sec.

    2. Roll into little balls and place in baking dish. I use a teaspoon as I think that is large enough given the sweetness but can be any size you choose.

    3. Place in freezer for 15 minutes. 

  3. Coating
  4. 1. Mix melted coconut oil, cocoa and maple syrup in a bowl on 50 deg Sp 2 / 1 minute. (The oil can also be melted in a microwave and mixed by hand).

    2. Remove balls from freezer and dip in the cocoa mix.

    3. Return to freezer for 15 minutes.

    4. Enjoy! These can then left in the refrigerator for several days.
