  • 30 g coconut palm sugar

Recipe's preparation

  1. Place dates in jug and chop speed 5 / 7 seconds. Scrape bowl and add vanilla then blend on speed 5 for 5 seconds.  Scrape bowl and blend again, speed 8 / 4 seconds, scrape bowl and blend again speed 5 / 5 seconds.  Mix should be like a paste at this stage. 

     

    Add flesh of the avocado and blend on speed 5 / 5 seconds.  If your avocado is particulary hard, you may need to repeat the blending to mash it all. 

     

    Add cacao powder and sugar and combine on speed 2 / 10 seconds. Scrape bowl and mix on speed 3 for 20 seconds. 

     

    Refrigerate until firm enough to roll into balls then roll and coat in cacao powder.

    This was good but it didn't set in the fridge so I could make them into truffles. I Didn't have any coconut sugar so used rapadura sugar instead so this might explain? Anyway I improvised and ate it like a mousse and it was so so soooo delicious!!!
