Baileys Irish Cream & Pistachio Fudge - ThermoFun

Ingredients

Fudge

  • 1000g white chocolate melts
  • 150g shelled pistachios
  • 400g condensed milk
  • 130g Baileys Irish Cream

Recipe's preparation

    Baileys Irish Cream and Pistachio Fudge
    1. Line a rectangle slice tin with baking paper.
    2. Place pistachios in TM bowl and chop 3 sec / speed 5 (you still want large bits). Set aside.
    3. Place chocolate in TM bowl and grate 10 sec / speed 9. Scrape down and repeat.
    4. Add condensed milk and Baileys and mix 10 sec / speed 3.
    5. Cook 10 mins / Varoma / speed 2.
    6. Add pistachios and mix 10 sec / speed 3 / Reverse.
    7. Using your spatula ensure pistachios are mixed through.
    8. Pour into prepared tin and allow it to set in the fridge.
    9. Cut into small squares - it's very rich!

    i love this no fail recipe. I add a half a cup of cranberries for a xmas version - goes down a treat. Thanks for the recipe

    I used a recipe from a different site that used 500g (or thereabouts) of white chocolate to 200g of sweetened condensed milk.  At first it split, which is what is seems to do in Australia, but I added the Baileys and, in a fit of pique, blitzed the bloody thing on speed 6 for about 20seconds.  Whaddya know, it re-emulsified and was fine.  It is in the fridge now, setting.

    Absolutely decadent and perfect for Christmas.    I added 100gm of butter (to my second batch!) which helped the fudge set and provided a creamier texture - not that it's really needed.
