Baked Blueberry Cheesecake

  • 250 grams Maree biscuits
  • 100 grams Butter
  • 500 grams Philladelphia Cream Cheese
  • 250 grams cream
  • 250 grams Tub Mascarpone cheese
  • 4 eggs
  • 1 teaspoon vanilla essence
  • 300 grams Frozen Blueberries
  • 220 grams caster sugar

Recipe's preparation

    Baked Blueberry Cheesecake
  1. Preheat oven to 160 degrees.  Line a 22cm springform cake tin with baking paper.

    Place biscuits in TM bowl 3 seconds speed 7 and set aside

    Place butter in TM bowl and melt 2 minutes 80 degrees speed 1. Add biscuits and mix reverse soft speed until combined. Press this mixture into base and sides of prepared tin.  Freeze for 30 minutes.

    Insert butterfly to TM Bowl add cream, vanilla and sugar. 20 seconds speed 4.  Remove butterfly and add cream cheese, mascarpone, eggs and mix for 30 seconds speed 5 until combined.

    Pour half the mixture into tin and add half the blueberries, add remainder of mix and top with remaining blueberries.

    Bake for 1 1/2 hours or until just firm.  Set aside to cool. Remove from Tin and Refriderate until set.

    Great recipe, if you’re having trouble gettting your crumb to stay on the sides of the tin just grease lightly with butter over the top of your Baking paper then apply the crumb 😉

    I mase this for a mothers day treat.

    Some key learnings : I missed the part about the crumb going on the sides and just put it on the bottom but not one noticed!! The key learning for me was the cooking. I used a 22cm tin and it rose about double the height of the tin during cooking, lucky I had left plenty of baking paper so it did not spill over. It returns a lot on cooling so was just over the top at the end. Be warned!!

    The flavour is AMAZING. Everyone complimented on how lovely it was. I served it with a berry coulis which also went down a treat.... 5 stars for sure....

    I added extra melted butter to the milled maree biscuits after a recommendation above but I'm still struggling  to get the base to stick to the walls of the cake tin.

    Any suggestions on acheiving this an easier way??

    I pressed the biscuit base into the walls firmly and allot of it just crumbles off the sides when I try to move around the wall of the tin to the next section.

    Sensational, just dont use canned blueberries like i did. The high liquid content of the canned ones makes them sink to the bottom making for a soggy base, but it was still delicious!

    I deleted the eggs and made this a no bake cheesecake , as I ran out of time, and it was amazing. I also placed in the freezer to set and then removed and refrigerated prior to serving. Next time I will probably leave in the freezer right up until serving though as centre sort of sunk in the middle due to heat in the room and would be easier to cut. Still, a great success and looking orward to making the baked version.

    Also my first ever cheesecake - so easy!!!  Mine took about 2 hrs to cook, but I had dropped my fan forced oven's temp by about 15 degrees, so perhaps I don't need to do that next time - and there will be a next time!

    This cheesecake is delicious. I used a too small tin and it overflowed a bit so beware it makes a very large cheesecake.   it was really easy and the texture and flavour just wonderful. Thanks for sharing.

    I decided to sub the crust for a date/almond blitzed mix I've used in raw cheesecake before. It wasn't the best choice and burned rather badly unfortunately.

     

    But the cheesecake itself, OMG divine! Will def be making this again with the proper crust.

    This is the first cheesecake I have attempted and what a pleasant surprise! So easy!

     

    i left it in the oven for one hour, 40 minutes and it could have probably come out as per the recipe at one and a half hours, it just feels strange bringing it out of the oven when it doesn't feel ready, but it tasted Devine!

     

    i will try different fruits next time.

    I used this recipe today to attempt my first baked cheesecake. It was a hit! I substituted the blueberries for frozen cherries and also added 180g of white chocolate to the filling. I therefore reduced the sugar to 150g so that it wasn't overly sweet. Easy recipe which I will use over and over again! Thank you for sharing!! tmrc_emoticons.)

    Really delicious cheesecake. Light and not overly sweet.

    I used a different base recipe to make it gluten free and worked well ( almonds, sugar and butter).

    Took about 2 hours to cook in my oven at that temperature.

    Will cook again definitely.

    Made this last week - was really easy, hardest thing for me was sticking the crumb base around the sides of the pan, and knowing how thick it was etc... Was a huge success, looked amazing and tasted so good. Everyone was very impressed I didn't want to tell them how easy it was... Didn't go home with any leftovers!!
