Banana Butterscotch Pudding

Ingredients

4 portion(s)

Pudding

  • 130 grams plain flour
  • pinch salt
  • 120 grams caster sugar
  • 3 teaspoon baking powder
  • 1 banana
  • 250 grams Milk
  • 85 grams unsalted butter, Melted
  • 1 egg
  • 1 teaspoon vanilla extract

Topping

  • 140 grams brown sugar
  • 80 grams golden syrup
  • 250 grams Boiling water

Vanilla Icecream To Serve

Recipe's preparation

    Pudding
  1. Preheat the oven to 180 degrees celcius.

  2. Add the banana to bowl and mash 5 seconds/speed 5

  3. Add milk, butter, egg and vanilla extract to bowl with banana and mix 5 seconds/speed 5

  4. Add the flour, salt, sugar and baking powder to the bowl and mix 10 seconds/speed 4

  5. Pour into a greased 2.5L baking dish

  6. Topping
  7. Place brown sugar, golden syrup and boiling water in Thermomix bowl. Cook on Varoma/5 minutes/speed 3

  8. Pour the boiling mixture carefully over the pudding, then bake for 30-40 minutes or until cooked through when tested with a skewer.

  9. Serve with vanilla icecream.

    This is our favourite family pudding. I make GF and Fructose Friendly - GF flour, coconut sugar (instead of brown) and 50% Rice Malt Syrup, 50% Sugar Free Maple Syrup (instead of Golden Syrup). Delicious!

    Winner. Great recipte.
    As a variant I added cream and butter to the sauce as with sticky date pudding butterscotch - this made it quite rich, but my people were happy with that.
    Also seems to work to cook for 15-20 mins prior to adding sauce so you get some texture to the pudding rather than boiled dough

    Tasty however would go with the comment below about adding the sauce once the pudding has cooked a little first. My batter was quite runny and so the sauce seemed to blend in with it rather than making a sauce.

    This recipe is so good! Made it twice this week! With EDC custard. Also had two bananas to use up so it had a fabulously rich banana flavour.

    Yummo!! I cooked the pudding for 10mins, so it was just starting to cook, then I poured over the sauce. Worked perfectly.

    This is a great recipe, quick and easy. One banana is definately enough, I cut down a little on both lots of sugar, and yes it does become a little stodgy, but we all liked it that way. Have just made it for the second time.

    Next time I make this I will use less milk as mixture was quite runny and butterscotch sauce mixed in but was still really good straight out of the oven. Leftovers the next day however were not as palatable, quite heavy and stodgy. Best eaten freshly baked.

    I made this last night and it was fantastic. It was very easy to eat - not sickly or rich, one banana was perfect and I wouldnt/didnt need to change anything. We had it with thickened cream and I prepared it all before the main meal so it was ready to pop in the oven. Perfect!

    Tried this today - butterscotch sauce is awesome. The pudding I will try without banana - I did use 2 bananas so I could use them up but I think it was too much banana for me - texture came out like banana pikelet type not fluffy though. My hubby loved it though and it was quite rich. Do you have to have a banana in the pudding recipe as I would like to try it without and see what the texture is then. I also left it in the oven for an extra 10 minutes but turned the oven off as I couldn't tell if it was cooked through or not due to the sauce. But overall great recipe!
