Banana Carrot Muffins

  • 125 g carrot, about 2 med carrots
  • 2 eggs
  • 85 g brown sugar
  • 125 g oil
  • 130 g buttermilk
  • 125 g banana
  • 1 teaspoon vanilla
  • 40 g raisins, optional
  • 230 g plain flour
  • 2 teaspoon baking powder
  • 1 teaspoon bicarb soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1 pinch ground cloves

Recipe's preparation

    Banana Carrot Muffins
  1. place carrot chunks into TM bowl and grate, 3-5 secs on speed 5

    add all other ingredients in order and mix for 5 -10 secs on speed 4

    pour mixture into prepared muffin tina dn bake at 200 deg  for 20 mins

    remove from pan and cool on rack

    This was a winner! So quick and easy. They came out light and fluffy. I substituted some of the brown sugar for rice bran syrup but otherwise copied the recipe. I iced them with cream cheese mixed with lemon. Thank you for the great recipe

    Good one- I used wholemeal (although will try spelt next time- I'd just ran out) and rice malt syrup instead of sugar so they're good for the lunch boxes.

    These are great. An easy way to hide fruit and veggies from the children. I added craisins instead of raisins, and threw in a tablespoon of chia seeds for extra goodness.  Great recipe.

    Oops, in my hurry to get them in the oven before school pick up, I forgot the oil...they rose like witches hats/dugongs noses and were a bit rubbery on the outside, but light and fluffy on the inside. They are still yum!
